I bought this at AEON Liquor when I went to AEON Katsuragawa with a friend. I was looking for something unusual for the parking fee 😁. I've had Fudo before, but this is the first time I've had Niiyu. It has a honey-like aroma. The flavor is beautiful and gorgeous, but it's a bit too refreshing for an unfiltered, unpasteurized sake. I would like a little more umami... I think it has a lot of rice flavor 🤔.

Good evening, first series here 💁 from Niiyu. Also known as Fudo Toi brand, this is a test brew of Niiyu's frog series 🐸🐸🐸🐸🐸 Rice is undisclosed🍶. I bought it in Kumamoto during my Shikoku - Kyushu - Kinki trip last year. It was a brand I wanted to try at least once, and I was so happy that I let it sit for more than a year. When I opened the bottle and poured it, it smelled like honey and custard. The mouthfeel is moist and sweet. It has a savory, caramel-like flavor and a balance of sweet and sour astringency. It is so delicious that you can't help but smile! The full-bodied sweetness and bitter astringency in the aftertaste. The taste is not too strong, but has a high level of quality, and is very similar to a pudding! This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.
