I bought this at AEON Liquor when I went to AEON Katsuragawa with a friend. I was looking for something unusual for the parking fee 😁. I've had Fudo before, but this is the first time I've had Niiyu. It has a honey-like aroma. The flavor is beautiful and gorgeous, but it's a bit too refreshing for an unfiltered, unpasteurized sake. I would like a little more umami... I think it has a lot of rice flavor 🤔.

Good evening, first series here 💁 from Niiyu. Also known as Fudo Toi brand, this is a test brew of Niiyu's frog series 🐸🐸🐸🐸🐸 Rice is undisclosed🍶. I was able to get some free time during the day, so I went to the gym and worked out for an hour, then went straight to the bathhouse and had a nice, wide bathtub, and then had a long-overdue dinner. I started with a beer and then opened a bottle of "Hanagaki Ginjo" that my father-in-law gave me for New Year's. After the refreshing sweetness that is typical of Hanagaki, the umami flavor spreads out, leading directly to the rich aftertaste. It is relatively sweeter than most of Fukui's local sake, but it has no peculiarities and is easy to drink 😉. I'll have to consume it little by little since my cellar is overloaded with more sake from the New Year's holiday including this one 😁.

This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.
