I'm here today for my department's farewell party! We had a beer, 2 mega highballs, and 4 bottles of warm water, and when they were all nicely tinted, we threw in some sake 🍶. I drank it hot, and it had a nice, mild taste of rice with a smooth texture and a nice smooth taste down my throat! It is not too assertive, but in a good way, it is not like a hot sake, and it also promotes the sake and the meal 👍. Drinking continues at Don Chaya 🕺. We emptied the weird "Haneya", followed by another round 🍶. We chose our first brand that we could see in the cellar✨ First "Kame no Ou Junmai Ginjo Shiboritate" 🎉. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o 😁.

It is Kamikawa Taisetsu Shuzo's Kamikawa Junmai Sake. It was purchased at a Seven-Eleven in Sounkyo, Kamikawa-cho. It is a good sake with good acidity and sharpness. It is good to drink at room temperature.

Another bottle was opened at the Kizuna Festival. Golden crystal that saw the light of day at Izakaya Shinkansen. Gold Crystal label expressed with a characteristic figure. It is one of my personal favorite labels. The top-tasting aroma has a very classical sake flavor. The mouthfeel has a light umami from a hint of sweetness. First contact is lighter than expected. The finish is again full of sake-like aftertaste, with a mild acidity and a strong bitterness. I had imagined it to be a more mellow and stand-alone sake, but it is considered to be a high performance food sake. During the festival, I served it with tempura and dried scallops that I bought and brought with me, and it was quite good! Thanks for the food!

Tonight I'm having this one 🍶. I got this on my trip to Fukushima last month! I've been wanting to drink this since I saw it on Izakaya Shinkansen 🍶✨. They are the only sake brewery in Fukushima city😃. Mellow, refreshing, oicy❕. The aroma is slightly fluffy 💠. Slightly crisp but still mild 🌸🍶✨. This is a great one ❕. I'm glad I found you 😆. I also love the fukushima saké💗. It's very tasty.

My wife has a slight taste disorder, but since she couldn't spend time at her parents' house 😊, we treated her to another New Year's meal 🎍. The wine to go with it was "Kyo no Hana" purchased at our favorite liquor store in Kushiro, Sagajo Shoten. I was torn between this and "Tatsusen" brewed by the same brewery, neither of which I had ever tasted before, but I chose this one because of the "fantastic rice" description 😊. Kyo no Hana No.1! There really are a lot of different sake rice varieties available: ‼️ It has a sharpness that is typical of Fukushima sake, but at the same time, it has a moist and gradually delicious flavor 😋.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. But I wonder if people in the Nara period really enjoyed this kind of sake 🤔.

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. Even so, I heard that the owner stubbornly continued to make sour sake. (^○^) Nowadays, with the Shinsai boom, Yoemon's sour sake is also selling well, especially outside of the prefecture. This sake itself is light and refreshing. It has a mild taste that does not interfere with meals. It was very tasty. ( ´ ▽ ` ) No
