I was torn between this and "Tatsusen" brewed by the same brewery, neither of which I had ever tasted before, but I chose this one because of the "fantastic rice" description 😊.

Kyo-no-Hana from the sake bag I bought in Fukushima.
It is sweet but not too sweet, so it is very tasty.
Today I paired it with chawanmushi (steamed egg custard), grilled hanpen cheese with mentaiko (cod roe), and ahi jio with nori (dried seaweed), all of which went very well together.

Kyo no Hana No. 1 spring sake,

Tatsusen Junmai Ginjo Kyonohana. Kyo-no-hana is the sake rice used, and is said to be a fantastic rice. It has a mellow, sweet taste with a hint of ginjo aroma. I had an image of Tatsusen as a more dry sake, so this is a bit surprising.
