Hitogochi rice is used. I got the impression that the freshness and fruity sweet/umami taste was accented by a slight bitterness. I think I prefer the Misuzu Junmai Ginjo I drank before, which has a stronger sweet/fruity flavor. I think it gets sweeter and better after a longer time than when it is freshly opened.

Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇

This is my first Suehiro❗️ When I went on my trip to Aizu, there were signs everywhere Sake by Suehiro Sake Brewery😊. The aroma is subdued! The taste is more refreshing than I expected. It is a very easy to drink sake with a nice umami flavor👍. It was a well balanced sake that would go well with a variety of meals. It was a delicious sake!

I've never had this sake before❗️. There are many delicious sake in Tochigi, so I'm looking forward to opening the bottle 😀. The aroma is subdued❗️ I'm not sure if this is the first time I've had it, but I'm sure it will be the last. The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!

1853 2024/9 Kyo no Haru Junmai Nama Nigori Sake 67% 17° 24/8 A Ine-cho, Kyoto 720 1945 The bottle was warned to be opened with caution, but there was no fizziness at all, and the lees did not move even slightly. The first thing I did was to pour the clear sake into a cup, and even there I did not feel any fizz. But the taste is quite refreshing and delicious. After the second glass, I mixed the lees with the nigoromi (nigori)... Perhaps because the lees is so thick (about a quarter of the lees in stillness), the sake was a little heavy, beyond soft. It might be exquisite if gas were involved...but I kept on drinking. I had the impression that if there was a sense of effervescence... if there was no effervescence, the clear sake would be better.... On the second day, I had the clear sake and light nigori. Since I was enjoying Ine-Manbaike at the same time, I thought it would be good if they were from the same brewery, so I combined the remaining lees with Ine-Manbaike and enjoyed it as a mellow pink sake.

Home drinking. 100% Yamadanishiki produced in Shiga Prefecture The color is slightly whitish. The mouthfeel is clean and mild. The taste is sweet like green apple. The acidity is blended with sweet and sour. Is it sweet? Is it sweet? But then the sourness appears and has a big impact 🤩. The aftertaste has the umami of the rice, which is even more pronounced when combined with the acidity. I felt that the hint of aroma also penetrated through.
