Birthday gift sake No. 3 Speaking of comets, Ricaman is a liquor that I don't get a chance to drink very often because I don't go to Ricaman. It has a mild top-fragrance aroma. It is gorgeous and refreshingly sweet on the palate. It is a versatile type of sake that can be enjoyed with food or on its own. For better or worse, it is an excellent Daiginjo. I think it tastes more open and sweeter on the second day than when it is freshly opened. The design of the sake lid looks just like the one from a while ago😅.

The third shot was Tatsuzumi, Sashiu-san's gift sake. It's so bitter, isn't it? Tatsusen! I was able to get some free time during the day, so I went to the gym and worked out for an hour, then went straight to the bathhouse and had a nice, wide bathtub, and then had a long-overdue dinner. I started with a beer and then opened a bottle of "Hanagaki Ginjo" that my father-in-law gave me for New Year's. After the refreshing sweetness that is typical of Hanagaki, the umami flavor spreads out, leading directly to the rich aftertaste. It is relatively sweeter than most of Fukui's local sake, but it has no peculiarities and is easy to drink 😉. I'll have to consume it little by little since my cellar is overloaded with more sake from the New Year's holiday including this one 😁.

I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!
