Happy New Year! After making Zoni, I finally had my first drink. I started the year with Kaneizumi, which I received from a friend the day before yesterday. The aroma is good, but the taste is sweet and fruity at first, followed by a refreshing acidity that lingers in the mouth, and finally the taste of rice lingers. The sweet and fruity taste fills the mouth at first. According to my friend, he has been drinking Kaneizumi since the old days when it was made by Horimoto Shuzo. and then it was taken over by Aihara Shuzo of Amego no Tsuki with the toji-san. After the brewery went out of business and was succeeded by Aihara Brewery It is said to be his favorite sake even after he took over the brewery with the master brewer. At the tasting, I tasted a ripe LaFrance.... I was attracted by the words "Ripe LaFrance" and tasted it... I was scared 😳. This is really LaFrance 🍐! The way the aftertaste pulls away from the 🍐 is fantastic👍. Originally made by another brewery, but when they quit, Aihara Brewery took over the brewery. I heard it used to reign in the East and West with Jyushiyo (never had it...) 🤔. I don't have any experience so I can't compare, but this one is different for me personally!

This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. It's a sweetness like strawberries that I've never tasted before - I think this is a taste that only freshly pressed sake can give you. It's delicious!

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.

I bought some fire-activated nigori at the co-op because it looked interesting... so much moromi... ！！！！！ I looked it up and found that there is also active nigoromi... Sorry I only have a picture of it after mixing! I know the nigori in Niidashizenshuu and the nigori in this season's Sasasamune have a lot of moromi, but this is probably even better than that! The impact is amazing! Isn't it about 70-80% of the bottle? What is this? When you drink it... it's thick! As you can see, the rice flavor is coming forward. There is a slight alcohol taste, but it also has a banana smoothie-like flavor that is not too classic, making it easy to drink. It is thick, but if you cool it down and drink it, it is surprisingly easy to drink. In any case, it is quite strong, so it would be good with Chinese dishes with strong flavors. It would be better with Chinese food that has a strong flavor, such as stewed eggplant, grilled fish, or simmered dishes, as the richness of the sake would drown it out. I think I'll try it with Bean-curd soup with Bean-curd soup with Bean-curd sauce. LOL! Thankfully, it is fire-roasted, so you can drink it slowly and leisurely over several days. It doesn't lose its flavor and is very useful when the food has a strong taste.
