Yesterday we went to Bicchu Matsuyama and Kibi Tsu! We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨. Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. The long corridor and historic appearance of the Kibitsu Shrine that we visited afterwards was truly heartwarming 🍑. After exploring, we crossed the Seto Inland Sea and drank a glass of Kibi-shu 🍶. When you open the bottle, you will find a deep aroma of nuts and chestnuts. The mouthfeel is slippery and dry. It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor. It has a presence like nuts and bitter chocolate. However, the stimulation of the hot, acidic, and astringent taste tightens it up like a whip, and it has a good salty taste with a firm edge!

Rice used is Miyamanishiki I didn't find it too harsh, but my partner, who prefers a gorgeous sweet taste, found it too much for his palate. It is true that the alcohol taste comes first, and the mouthfeel is not smooth. I was in a sake store near the train station in Yonezawa when I was traveling and asked the owner what was the best sake in the area 😅🍶🍶. The owner of the store recommended this "Koubai" 😅🍶. My daughter-in-law gave it to me as a Father's Day present, but I don't remember exactly what it tasted like back then 🙇🤣🤣I don't know if it was a coincidence or if he remembered what I said at some point, but I tasted it for the first time in 40+ years (I'm getting old lol😅😅) 🤣🤣🤣🤣🍶. The color was clear and colorless, and although it was described as having a "gorgeous aroma", it was quite subdued and had a mild mouthfeel. It was a bit of a sharp taste and did not linger on the palate, perhaps due to the alkaloids. Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.
