It is a junmai ginjo-shu, a light nigori (light nigori) sake brewed with my favorite sake rice from Nagano, Hitogokochi, polished to 55% rice polishing ratio 😄.
The appearance is a cloudy, misty yellow-green.

The aroma is mild, pale apple, pear.
Sweet rice cake-like rice aroma.
Soft touch on the palate.
The gasiness is rather firm.
The nose is clear, with a strong sweetness.
The acidity is smooth and gentle.
In the middle part of the mouth, the feeling of dregs spreads softly and the gaseous sensation gently goes down the back of the throat, followed by a crisp and sharp finish with umami including bitterness.
The bitter aftertaste is moderate.
It has a good balance of sweetness and bitterness that is typical of Hitokochiki!

The aftertaste is medium short.

It has no alsophony, and if you were to give it to me blind, I would say it was a junmai type.

It is a limited edition bespoke sake from Jizakeya Miyajima, a sake shop in Ueda, Shinshu, and is usually shipped as fire-aged junmai sake.
It is marked by a shoulder label that reads "Karakuchi Fruity Nao Kumi," which Mr. Miyajima came up with.
He wants it to be called "Karakuchifru Junmai!

This is "Do" from Yamamoto Sake Brewery, which brews Yamamoto, a sake that I have always been curious about as a nigorist.
It seems that "Do" is always released a little after the sake I really want to buy, so when I see it at the store, I always think, "Aha! Whenever I saw it at the store, I had to pass it up because my fridge was always overflowing with it 🥲.

The third sake is Mimuro Sugi Bodai-Hashiwadashi Yamada-Nishiki Year of the Snake Limited Edition KINOTOMI.
This sake is not the one we drank earlier, which is sold only at the brewery, but a limited edition sake of the year of the snake from the Mimuro Sugi Bodai Hashiroshi series.
Since the Chinese zodiac sign for this year is Kinotomi, they are all named "KINOTOMI".

I wanted to buy these sakes for drinking at home but had to give up due to storage space, so I'm very thankful 🥰.
The first sake is Ni-Rabbit🐇🐇.
Every year, the rabbits do their best in the two hare zodiac bottles, but this year, the composition was a bit surreal, with a snake charmer-like rabbit and a rabbit controlling a snake muppet in a showdown? It's a bit surreal 🐍.

The concept is to use locally grown contract rice as the raw material, while sticking to the basics of sake brewing, such as the use of a traditional sake yeast yeast yeast and Yamahai sake brewing method.
It is supposed to be a food sake with a mild aroma and an excellent balance of acidity and sweetness.
The brand name comes from "Okuroku-gun," the generic name for the six counties in the region of Oshu.

The second sake was Hirotogawa Junmai Nigori Namaishu.
The aroma is sweet and refreshing.
It has a mature yet fresh pear and refreshing young melon.
The rice aroma is just before rich cooked rice, with a hint of koji.
The first touch is a refreshing sense of gas that comes from the modest, straightforward sweetness of the rice.
Along with the meloniness of the hint of incense, the bitterness of nigori and the umami of rice are fully felt, and it finishes dry and crisp.
As you drink more and more of it, the dryness from the mid-part comes forward.
If anything, it is more dry than I expected, and I got the impression that it is refreshingly dry 🍶. アラジンThis is the first time this year for CHUIN.

Tamahibiki is one of Garakudai's sweet series along with Rokka.
I was curious about the production log that can be found on line, which states that the quality of the sake would be near perfect if not for the resinous aroma in the overtone.
The refreshing volatile aroma has a beautiful aroma of sweet white peaches and blue melon.
In the mouth, it is gentle, but the sweetness gives way to a chili-like stimulation of gasiness, a slight citrusy acidity, and a dryness that comes forward little by little and is clean and crisp.
A very faint lingering bitterness.
I couldn't detect any of the "hint of resinous aroma" that was mentioned in the production log, perhaps masked by the freshness of the volatile aroma.
It was a very tasty sake to my liking!
Garakudai is going to shift its overall sake quality to be drier than it is now.
I know that Garakudai's "dry" sake is not just light and dry, but it is also a matter of taste, and I would be happy if they could successfully retain this kind of sweet sake as well.
