アラジンThis is another series of sake that I want to drink at home but for some reason can't afford to buy every year.
This is "Do" from Yamamoto Sake Brewery, which brews Yamamoto, a sake that I have always been curious about as a nigorist.
It seems that "Do" is always released a little after the sake I really want to buy, so when I see it at the store, I always think, "Aha! Whenever I saw it at the store, I had to pass it up because my fridge was always overflowing with it 🥲.
This is the first time I've had this sake, including outside drinking 🍶.
Since it was an outside drink, they stirred the tailings well before pouring it.
By the way, it looks and sounds like doburoku, but it is not doburoku because it is "seishu" and is filtered.
The appearance is a snow-white color with a hint of green and green, with beautifully spacious tailings dancing in the air.
There is a rich aroma of rice in the tailings, with a slight pickle aroma in the back that is not unpleasant.
The mouthfeel is pleasantly mellow with a gassy, shrieking sensation.
There is almost no sweetness, and the taste of the rice in the gas and the tailings spreads dry and flat.

The aroma is mild and modestly fruity.
On the palate, it has a clear touch.
The sweetness has a dark, juicy, Kangiku-like character and a smooth acidity.
The overt aroma is sweet and soft.
It has a clear umami taste and a gentle, slightly bitter astringency.
The aroma and flavor change depending on the sake container and how long the bottle has been open, so it is difficult to make a blanket statement, but it was crisp and clearer than I had expected.
It had a taste of sweetness that is typical of Kangiku, so I thought it might be interesting to let it sit for a while. アラジンA time of change is approaching for Kaze no Mori's masterpieces....
A comparison with a test brew of a new sake quality design that will determine the future direction of the company.
Kaze no Mori Akitsuho 657, a well-loved masterpiece from the past.

Clear crystal, lots of gas bubbles in the glass when poured.
The aroma is youthful, fresh, and gorgeous.
Pear, white grape, sweet melon aroma, and a slightly firm veil of volatile aroma.
On the palate, sweetness is accompanied by a hint of bitterness, followed by the lively stimulation of gas and acidity.
The volatile aroma is rich and refreshing even in the hints.
The sharpness is good, with a lingering complex flavor that is typical of Akitsuho.
The usual sweetness of the dark hininess and the lingering bitter complexity are pleasant.
At any rate, the brewing technique must be amazing to be able to change the flavor and alcohol content so subtly with such a similar sake quality design.

It is probably the longest sake I've had in the past.

The third sake is Mimuro Sugi Bodai-Hashiwadashi Yamada-Nishiki Year of the Snake Limited Edition KINOTOMI.
This sake is not the one we drank earlier, which is sold only at the brewery, but a limited edition sake of the year of the snake from the Mimuro Sugi Bodai Hashiroshi series.
Since the Chinese zodiac sign for this year is Kinotomi, they are all named "KINOTOMI".
The "m" of Mimuro cedar on the jet-black bottle, depicted by a white snake, is still an impressive design 🐍.
The fragrance is clean and sweet.
It has a slight sweetness with a melon-like melon peel.
The impression on the palate is clear.
There is no sense of gas, and the soft, round texture has a beautiful umami flavor.

The second sake is KINOTOMI, a limited edition sake for the year of the snake.
Two of the sake in this set are Mimurorogi made by Imanishi Shuzo in Nara.
The other two sake in this set are from Imanishi Sake Brewery in Nara, and the rest are from Mimurosugi.
The clear bottle is an unfiltered, unfiltered, unpasteurized orikarami sake, which is limited to the brewery and the brewery's direct sales office.
Imanishi Sake Brewery is located at the knee of Ojin Shrine in Nara.
Ookami Shrine is dedicated to the deity Omononokunushi, who is also famous as the god of sake.

I wanted to buy these sakes for drinking at home but had to give up due to storage space, so I'm very thankful 🥰.
The first sake is Ni-Rabbit🐇🐇.
Every year, the rabbits do their best in the two hare zodiac bottles, but this year, the composition was a bit surreal, with a snake charmer-like rabbit and a rabbit controlling a snake muppet in a showdown? It's a bit surreal 🐍.
The rice used for the sake inside is "Manzai" rice, which was revived and cultivated in 2013 in the local city of Okazaki, and Maruishi Brewery was entrusted with its brewing.

The concept is to use locally grown contract rice as the raw material, while sticking to the basics of sake brewing, such as the use of a traditional sake yeast yeast yeast and Yamahai sake brewing method.
It is supposed to be a food sake with a mild aroma and an excellent balance of acidity and sweetness.
The brand name comes from "Okuroku-gun," the generic name for the six counties in the region of Oshu.
The motif on the label is the Kawanishi Dainenbutsu sword dance to appease ghosts, and the toji, Kentaro Miura, is apparently a central dancer in the sword dance.

It is Jikin's Hachitan-Nishiki.
This time, it was not ice-aged, but a fresh Jikin that just came out last month.
The appearance is a pale silver green.
The aroma is pineapple wrapped in a veil of white dumplings.
Texture is very smooth and slightly gassy.
The sweetness is citrusy and refreshing, and the acidity is cutesy.
The nose is more pineapple-like 🍍 and the aroma is more pineapple-like 🍍.
From the mid-palate, the fresh umami includes a pineapple-like bitterness, and it finishes with the crisp feeling of alcohol that is typical of nama-shu.
The lingering aftertaste, including bitterness, is long, and on the tongue there is a tanginess and bitter astringency typical of nama-shu.
As the cup is tasted, the pineapple flavor increases, and the tropical acidity and bitterness give it an interesting sharpness.
I hope to deepen my knowledge and experience of sake at chuin again this year. ☺️

The second sake was Hirotogawa Junmai Nigori Namaishu.
The aroma is sweet and refreshing.
It has a mature yet fresh pear and refreshing young melon.
The rice aroma is just before rich cooked rice, with a hint of koji.
The first touch is a refreshing sense of gas that comes from the modest, straightforward sweetness of the rice.
Along with the meloniness of the hint of incense, the bitterness of nigori and the umami of rice are fully felt, and it finishes dry and crisp.
As you drink more and more of it, the dryness from the mid-part comes forward.
If anything, it is more dry than I expected, and I got the impression that it is refreshingly dry 🍶. アラジンThis is the first time this year for CHUIN.

The first sake was a four-part bottle, which is rare at chuin.
It is Tamayura by Utashiro.
Don't tell me you didn't know how to read it at first and called it "Tamahibiki.
Tamahibiki is one of Garakudai's sweet series along with Rokka.
I was curious about the production log that can be found on line, which states that the quality of the sake would be near perfect if not for the resinous aroma in the overtone.
The refreshing volatile aroma has a beautiful aroma of sweet white peaches and blue melon.
In the mouth, it is gentle, but the sweetness gives way to a chili-like stimulation of gasiness, a slight citrusy acidity, and a dryness that comes forward little by little and is clean and crisp.
A very faint lingering bitterness.
I couldn't detect any of the "hint of resinous aroma" that was mentioned in the production log, perhaps masked by the freshness of the volatile aroma.
It was a very tasty sake to my liking!
Garakudai is going to shift its overall sake quality to be drier than it is now.
I know that Garakudai's "dry" sake is not just light and dry, but it is also a matter of taste, and I would be happy if they could successfully retain this kind of sweet sake as well.

Izumikawa, a local brand from Hiroki Shuzo Honten, which brews Tobiroki.
Kiku-Senkawa is a ginjo-shu with brewing alcohol added.
Since it was a special occasion, we had it heated 🍶.
The aroma is like freshly cooked rice.
It has a fluffy mouthfeel with a classic impression, with a sharp acidity.
It has a nice sharpness and a short, gradual aftertaste.

This is Kamo Nishiki's gin-sen tanrei shusshi direct-fermented.
I used to think that Kamo Nishiki was known for their sake with a "hatafuda" (a tag), but I didn't realize that they also have this kind of sake!
In fact, I have never had a chance to drink Kamonoshiki's sake, even though it seems to be perfectly suited to my personal tastes.
So this is my first Kamo Nishiki sake.
The aroma is mild and reserved.
From the watery entry, it is accented by acidity and finishes clean and tight with a beautiful umami.
The aftertaste is short.
It is fresh and slim, with a hint of classical flavor, and is in the lineage of Niigata's light, dry sake.
The Japanese sweets in the fourth photo are not directly related to sake, but they are azuki sweets given to me by a regular customer.
I was happy because I love to have sake and something sweet together: ☺️

Cleaning up the house is a hassle, so I'm going to at least clean up the check-ins 🧹.

Yamagata Masamune Junmai Ginjo Aizan.
I had not had Yamagata Masamune at home yet despite its high reputation, and it had been a while so I casually asked for it.
I was surprised when I drank it 😳.
The aroma was subdued, yet very pleasant and fruity.
On the palate, the fruity yet clear sweetness and just the right amount of acidity to balance that sweetness spread beautifully.
The rich, firm, yet beautiful and wonderful taste flows through the mouth with elegant and sweet overtones.
The lingering finish is also beautiful.
This is one of my favorite Aizan sakes 🥰.
I told the owner, Mr. Kawada, how delicious it was, and he said, "According to what I heard, this sake was the most popular among the brewers at Mitobe Brewery this season. I heard that this sake was the most popular among the brewers of Mitobe Brewery this season.
It was a great taste, which was understandable.

To be honest, I don't have any notes, so even if I post it, it's just a picture 😅 since it's the end of the year and I'm here 😅.
The sake served was Gassan Junmai Ginjo, Shiboritate Un-filtered Nama-shu.
Tsukiyama is delicious, isn't it?
This sake also had a fine fruity taste, just like Tsukiyama, and the freshness of the freshly squeezed sake made me finish the cup in an instant. ジェイ&ノビィHi Aladdin😃.
