When I always choose my own sake, I tend to ask for the sake I have had before, which I prefer.
In search of new encounters, I decided to leave the last drink to the owner 🍶.
Here are the sake selections.
It is a limited edition bespoke sake from Jizakeya Miyajima, a sake shop in Ueda, Shinshu, and is usually shipped as fire-aged junmai sake.
It is marked by a shoulder label that reads "Karakuchi Fruity Nao Kumi," which Mr. Miyajima came up with.
He wants it to be called "Karakuchifru Junmai!

Unsweet apples, pears, melon, and blue bananas are covered with the rice aroma of freshly pounded rice cake.

A hint of rice sweetness and a refreshing sourness spreads.
From the fruity overtone, a beautiful umami flavor develops.
At the end, the dryness goes down the back of the throat in a flash, and it finishes nicely with a sense of refreshment.
The 17% alcohol content leaves a warm aftertaste.

I realized again that I can drink dry sake that is not only dry and dry but also has umami and aroma, or rather I like it.
Dry and fruity = "colorful" and if it becomes popular, I'll be drunk 😊.
