A sparkling nigori from an up-and-coming brewery in my hometown, Fukui. It looked like it was about to blow up, so I turned the screw with trepidation, but the bottle opened quickly. Oh, no. The aroma is of gentle rice. A very natural aroma. The gasiness is not a bit gassy, but it is strong. It also has a gentle sweetness and a crisp acidity. I wonder if this is what refinement is all about. It finishes gently and smoothly, while retaining a refreshing acidity. I have not had many Fukui sake because I have a strong image of classical sake, but Tsuneyama is modern and transcends the concept of dry sake. It is modern and goes beyond the concept of dry sake. I will continue to follow it!
