The limited edition sake was named after the seven sages, and I chose the Junmai Daiginjo Liu Melody. It has a mild sweetness of rice without any cloying taste, but it spreads out, and the sourness gradually emerges as it smoothly dissolves, ending with a slightly stronger bitterness and acidity. It is a clean sake with a sense that the goodness of the water is still present. It is delicious. I drank the sake of the seven wise men who drank on my childhood. I am sure he will grow up to be a fine sake drinker.

The sweetness comes in a sizzle, but the mouthfeel is very smooth, probably because the rice is only 29% polished. The smooth sweetness is gradually followed by sourness and finally a pleasant bitterness that finishes off the palate. It is rare to find such a light sake. There is no roughness at all.

How many bottles should I buy? I want to buy all of them. But my cooler box is limited. I found a measured bottle of sake from a variety of rice varieties, both hi-ire and nama sake. It is a Junmai Ginjyo unfiltered Nama-shu made from Yamada-Nishiki. Yes, the first one is decided. Sweet juicy ripe melon. The smooth sweetness gradually gives way to a banana-like flavor, and when the thickness comes out, it finishes with a robust spiciness.
