Polishing ratio of 29% for Kangiku. It is also the first time to drink sake rice So-no-Mai. This sake rice was newly developed to increase the amount of sake rice produced purely in Chiba Prefecture, whereas 60% of sake rice was produced outside the prefecture. This is local production for local consumption. It is said that the rice has a good heart white and can be highly polished, and it is amazing that it could be polished to 29%.
The sweetness comes in a sizzle, but the mouthfeel is very smooth, probably because the rice is only 29% polished. The smooth sweetness is gradually followed by sourness and finally a pleasant bitterness that finishes off the palate. It is rare to find such a light sake. There is no roughness at all.
