The spiciness gradually increases and it finishes dry. It feels quite dry, but the sweetness continues until the end, so the overall impression is thick.

4.2☆☆4.2 Rice polishing ratio 50%. Alcohol content 17 100% Aizan I bought this rare Aizan unfiltered unpasteurized sake at a sake shop not so close by. The sweetness spreads on the palate, while at the same time the fresh bitterness and acidity kick the tongue. The end of the bottle has a woody aroma like that of oak barrels, and it finishes with a kick. It is delicious.

4.1 Rice polishing ratio unknown Alcohol content 13 This is a limited pure sake from Haneya, which was sold at a liquor store I recently found. The bottle was opened with a splash. It has the sweetness and acidity of a blue melon and a pineapple. As one would expect from a 13% sake, it is light and smooth. There is almost no bitterness, so it is as if you are drinking fruit juice. The green label was not chosen in anticipation of the Tokyo gubernatorial election.

It has a syrupy sweetness, a little tangy, and then gradually becomes spicy, and finally finishes with a heavy bitterness. It's not the dry type that is popular nowadays, but rather a collection of umami, and the bitterness is refreshing and refreshing, making it very pleasant to finish off.

☆ 3.8 Alcohol content: 14 Rice polishing ratio Unknown Never heard of this brand. I bought it by the packet. It is hard to find it even if you look it up in Sake-no-wa. Citrus sweetness, aroma, and acidity. Orange aroma, sudachi-like sourness and bitterness. In other words, a balance that would go well with grilled fish. It was a gamble whether it would be a hit or miss, but it was a hit 🎯.

It is exciting to have the sake bottled on the spot, as it is cask-filled. Fresh and juicy sake.

4.2☆☆4.2 Polishing ratio 50%. Alcohol content 16 100% sake Musashi This is an original sake created by Ishii Shuzo, the brewer of Toyoake, for the sake project in Toyosu. In contrast to Toyoake, it is a light, silky blue melon with a hint of banana, and while it is silky, it gradually turns tart and finishes with a moderate bitterness. The aftertaste is also sweet with a hint of sweetness that gradually fades away. The concept is A sake to be enjoyed in a park in Toyosu while looking at the waterfront. 〜With a side dish of fish. and it is perfect with sashimi and sushi. The taste is similar to that of Kangiku and Eiko Fuji. For more information, please visit the following URL. You can also purchase online. 4.0☆☆4.0 Rice polishing ratio 55 Alcohol content 16°-17 100% Aizan It has been a long time since I have tasted Houou Mita. We have not seen many Aizan sake recently, so we were happy to buy this one. It kicks in with the punchy Aizan sweetness of banana and cherry sensations. Then a zesty acidity and light bitterness. When cold, it also has a silky feeling. When the temperature returns to normal, it is very smooth. The acidity is quite strong.

3.8☆☆3.8 Rice polishing ratio 60 Alcohol content 15 This sake was also given to me by my subordinates as a farewell gift. This is the flagship sake of Ishii Shuzo, a sake brewery that has been cooperating with us in our sake brewing project. It has a strange feeling of sweetness and bitterness at the same time. There is bitterness in the sweetness, and in the latter half, the bitterness is very strong and sharp. It is more bitter than pungent. The sweetness is so strong that the pungency is not so strong. The sweetness is suppressing the pungency.

3.8 Rice polishing ratio 40 Alcohol content 15 No.7 yeast I was transferred to a new position at my company and received this bottle of Masumi Junmai Daiginjo No. 7 as a farewell gift from a junior colleague because I have always professed my love for sake. It had a soft sweetness, followed by a strong acidity and a fruity, almost Shine Muscat-like flavor. On the second day, it was smooth and sweet with a nice acidity. It finishes with a tangy spiciness. This is the first time I have had a bottle of sake. It took me a few days to finish it, during which time I was able to enjoy the various changes in flavor.

4.0☆☆4.0 Polishing ratio 59% (flat polished rice) Alcohol content 16 Hanafukiyuki 100% Kyokai 1801 It is amajuwa like Tara-chiyo, but it suddenly turns sour, pungent, and sharp. The bitterness and sourness appear from the very beginning, but the smooth sweetness is also present at the same time, which is a strange sensation. The second cup has a smooth sweetness and a tangy sharpness. Delicious. I had never heard of sake rice called Hana-buki, but it was born in Aomori Prefecture and named after the cherry blossoms at Hirosaki Castle. Moreover, I had no idea that it was the parent variety of Dewa Tsannin. I have not studied enough.
