Citrus sweetness, aroma, and acidity. Orange aroma, sudachi-like sourness and bitterness. In other words, a balance that would go well with grilled fish. It was a gamble whether it would be a hit or miss, but it was a hit 🎯.

It has a dryness in its sweetness, flowing with a silky sweetness, gradually followed by sourness and finally ending with a moderate bitterness. Gokotsuru is still my favorite.

It kicks in with the punchy Aizan sweetness of banana and cherry sensations. Then a zesty acidity and light bitterness. When cold, it also has a silky feeling. 3.8 Rice polishing ratio 40 Alcohol content 15 No.7 yeast I was transferred to a new position at my company and received this bottle of Masumi Junmai Daiginjo No. 7 as a farewell gift from a junior colleague because I have always professed my love for sake. It had a soft sweetness, followed by a strong acidity and a fruity, almost Shine Muscat-like flavor. On the second day, it was smooth and sweet with a nice acidity. It finishes with a tangy spiciness. This is the first time I have had a bottle of sake. It took me a few days to finish it, during which time I was able to enjoy the various changes in flavor.

The second cup has a smooth sweetness and a tangy sharpness. Delicious. I had never heard of sake rice called Hana-buki, but it was born in Aomori Prefecture and named after the cherry blossoms at Hirosaki Castle. Moreover, I had no idea that it was the parent variety of Dewa Tsannin. I have not studied enough.
