It has a full mouthfeel and even a bit of dryness, and finishes with a refreshing acidity and a bit of bitterness.

After that, the smooth sweetness and bitterness are juxtaposed with a slightly sour bitterness at the end. The whole bottle was bitter right after opening, but when I let it sit for a while and raised the temperature, the bitterness was removed and the overall sourness changed to a mellow sourness. It is a wonder.

The first sake of the year 2023 is Ni-Utsuri Junmai Ginjyo, a pure, unadulterated sake, named after the year of the rabbit. When the bottle was first opened, it made a sizzling sound. It has a sweet, juicy, blue melon-like taste with a barrel-like acidity similar to that of Shinmasa. The sweetness and acidity run together with a hint of bitterness that finishes with a kick. The small bubbles in the glass make it sound slightly effervescent. The man who runs after two hares will not catch them both. A profound phrase. It is a true statement, but I feel like I am being chased by three rabbits these days. If they ran in the same direction, I could catch them... I look forward to working with you again this year.

It has a sweet and juicy mouthfeel. It flows smoothly and is pleasant, or rather, it finishes with too much good bitterness. The sweetness has a little sourness, which makes it a bit like pineapple. However, the sweetness is dominant because of the strong sweetness of the rice, just like nigori. Naturally, it is very tasty.

It was served with Kiritanpo nabe (Kiritanpo hot pot) which I bought on a trip to Akita. It has a nigori-like sweet juiciness and a ripe melon flavor, but the aftertaste is not strong, and it is dry and sharp without a long pause. On the second day, the sweetness increases and the dryness changes to a refreshing sharpness.

I thought "Ekuofuji" was the name of sake, but it turned out to be the name of sake rice. No wonder there were so many Eirofuji.

It has both the freshness of unfiltered raw sake and the 17% alcohol content that is typical of Kaiun (I don't know).

Because the distance between the destinations was longer than expected and the travel time was longer than expected. When we tried to go to the first inn, we were told that the road to the inn was closed at 18:00. We hurried, but could not make it in time, so we hurriedly got another hotel and drank this sake at night. It was a dry sake, but I felt it was sweet because I was relieved, or maybe because I was tired. Still, it was the first time for me to experience the fear of not reaching my destination even though there were no traffic lights or other cars. I was overwhelmed by the scale of Akita on this trip.

It flows lightly with a hint of cemedine and finishes with a bit of strong bitterness. The aftertaste is drier than expected. On the second day, the cemedine smell and pungency become milder. The sweet and juicy Aizan-like taste increases, and the smoothness also increases, making it delicious!
