It had a soft sweetness, followed by a strong acidity and a fruity, almost Shine Muscat-like flavor. On the second day, it was smooth and sweet with a nice acidity. It finishes with a tangy spiciness. This is the first time I have had a bottle of sake. It took me a few days to finish it, during which time I was able to enjoy the various changes in flavor.

The second cup has a smooth sweetness and a tangy sharpness. Delicious. I had never heard of sake rice called Hana-buki, but it was born in Aomori Prefecture and named after the cherry blossoms at Hirosaki Castle. Moreover, I had no idea that it was the parent variety of Dewa Tsannin. I have not studied enough.
