I look forward to Melon 3.33 every year. It was a shame I missed buying it this year, but I was really happy to see it again at the event. It has a gentle, straightforward flavor of a sake made with a "sake yeast" (生酛) brewing process & no added yeast. It has a soft aroma reminiscent of ripe melon, and the balance of plump sweetness and natural acidity is very pleasant and light on the palate, making it easy to drink. As the name "3.33," meaning "1/3 step" of the four-step brewing process, suggests, the sweetness is moderate and refreshing. It has the juiciness of unfiltered sake, but with a natural finish that makes one feel relaxed. It was a bottle that reminded us once again of the appeal of natural sake.

It starts with a gentle aroma, then smooth and clear flavor spreads smoothly on the palate. The fresh and clear taste is as pleasant as the clear morning air. The aroma is subdued, but I could sense a gentle fruity nuance like a hint of apple. In the latter half of the wine, a light acidity appears, and the entire wine is finished with a light touch. It is not flashy, but it goes well with a meal, and you find yourself reaching for another glass...it is such a gentle and elegant wine.

When we visited the brewery in March, the blue was still fermenting in the tanks. I had been looking forward to a bottle ever since I saw it bubbling and bubbling, and finally got a glass. The aroma is subdued, with just a hint of green apple and grapefruit. In the mouth, a light gaseous sensation bursts forth, followed by a clean umami and a refreshing acidity. While the freshness of the sake stands out, the quality of the sake is sharp and clean, with an impressive crisp summery finish. It has a refreshing taste that will reset your palate after a meal with fat, such as grilled meat. It is a perfect summer sake to be enjoyed chilled in the refrigerator.

Aizan" was specially served at the event. The freshness of the just-opened bottle was pleasant, and the moment it hit the palate, I was drawn in by its bouncy freshness and sweet aroma. The rounded sweetness typical of Aizan gently spreads, and the refreshing acidity reminiscent of muscat or green apple tightens the whole. While being light, it also has a firm umami flavor typical of ICHIHAKUSUISEI and a sense of three-dimensionality created by the five tastes. It was a gorgeous and charming sake that captured my heart from the first cup. It is a once-in-a-lifetime sake that is perfect for special occasions such as events. The charm of this sake is even more apparent when it is served chilled.

We had a special chance to drink this sake, which is only available in Minamisoma City, at the "Konsai Festival"! This bottle is full of our commitment to additive-free and wooden vat brewing. When you put it in your mouth, a gentle sweetness spreads softly, and it has a very smooth, smooth texture. It is not flashy, but the umami of rice and the soft acidity spread gradually, and it has a gentle taste that seems to soak into the body easily. The acidity is very mild, and the lactic acidity is moderate. There is no heaviness or peculiarity that is often found in doburoku, and the overall impression is very clean. The aroma of banana and muscat aromas also rose faintly, and the natural fermentation-derived aroma gently passed through the nose each time the sake was drunk. It has a good balance of umami, sweetness, and aroma, and has a relaxing taste somewhat like Japanese sweets. This was a special opportunity to experience the "taste of Minamisoma" using local rice, water, and air at an event. The simple and honest production of this doburoku reached straight to our hearts.

This bottle was brewed using Nara Prefecture's "Nanarrow," a rice suitable for sake brewing, in the traditional Bodemoto brewing method that originated in Nara. It was an ambitious work that challenged us to see how far we could bring out the character of a new sake rice using an ancient brewing method. The moment I took a sip, I was struck by its clear, smooth acidity and soft, natural sweetness. The taste was familiar and refreshing, somewhat reminiscent of rum and white peaches, and was light yet juicy. Along with the acidity typical of sake yeast yeast, a "gentle wildness" characteristic of bodied yeast is faintly felt, and the layers of flavor spread out like a watercolor painting. While Nanarrow 657 from Kaze no Mori, which is made from the same Nanarrow, has a clear purity with a gaseous and sweet taste, Mimuro Sugi has a lightness with a slight complexity and a supple sense of balance. Both are "sake rice that will grow up in the future," and we could feel the difference in expression by each sake brewer. The character of Nanadoro itself is still unknown, but this was a gentle and gorgeous cup that gave us a glimpse of its potential. This sake can be enjoyed either cold or at room temperature, and I look forward to its future in Nara.

This bottle is made from improved Omachi grown without pesticides, and is made using a yeast-less sake brewing method. It has an impressive flavor that is somewhat rustic, yet has a solid core. When heated, the aroma of grain and gentle umami spreads, and the taste is soothing and gradually sinks into the body. The acidity is mild and not too heavy, making it a good match with meals. It is also good with cheese and fermented snacks. It is not "thick" but "strong," with a toughness and an honest taste that reminds one of the scenery of rice paddies. It is delicious at room temperature, but we also recommend "heating it up" and then "cooling it down. It is a warm sake that will melt your heart.

A new challenge for Kaze no Mori, using "Nanatsuyu," the first sake rice developed in Nara. This rice, which is a descendant of Nanatsuyu, produces a soft yet dignified flavor that is in tune with Nara's climate. When you approach the glass, a gentle and fresh flowery aroma is wafted over the palate. In the mouth, the fresh sweetness and clean acidity spread out with a delicate gasiness that is typical of Kaze no Mori. The gentle touch of this bottle gives the impression of a carefully prepared profile. The softness unique to Nanaroh adds a new expression to Kaze no Mori. It is said to have been designed with Akitsuho 657 in mind, but Nanaroh is a bit lighter and has a gentle floral impression. This was a sake that made us very excited to see how this sake rice will grow in the future, and gave us such a sense of anticipation for the future.

It does not have the heaviness or peculiarity that one might expect from a sake made from the traditional sake yeast, but rather a quiet and careful approach. It is a bottle that we would like to let it mature a little more, and we have high expectations for it.

The bright emerald green label of this bottle is cool and evocative of the early summer breeze. The transparency of the bottle and the condensation combine to create a refreshing visual effect, as if a cold creek were trapped directly in the bottle. We look forward to "Dusk Orange" every year. This year, its gorgeous passion fruit-like aroma was impressive, and its tropical nuances were even more pronounced. In the mouth, juicy sweetness spreads softly at first, followed by a crisp grapefruit-like acidity and a well-balanced finish with a bitterness reminiscent of orange peel. As indicated by the bright orange color of the label, the taste is bright and fresh, like citrus fruits bathed in the sun. Combined with the slightly effervescent, sparkling sensation, it is refreshing to drink. It tastes like 100% orange juice, and is perfect as an aperitif or as a daytime drink on weekends. The "citrus and Kouei Chrysanthemum" character is still alive and well this year. It is like a seasonal treat that will brighten up your mood.

The gentle aroma of green apples rises softly, and a sip reveals the freshness that is typical of nama-zake. The light umami and refreshing acidity are very pleasant, and the aftertaste is nicely integrated and quickly fades away. Even though it is a pure sake, it is mildly sweet at 15°C and does not become too heavy when served with a meal, making it easy to drink. The "Morishima" series, which started in 2019, is a new challenge by the brewery's executive director, Mr. Morishima, who is also the toji (master brewer), and has launched the series under his own name. Based on his past experience, he places great importance on "lightness" and "freshness. The company uses Miyamanishiki, and while adhering to traditional methods, they aim to create a flavor that is in tune with the current era. The label design incorporates the stone wall of the brewery that collapsed in the Great East Japan Earthquake, and I could sense the brewery's strong desire to continue sake brewing in the future. Although I came across this bottle by chance at an izakaya (Japanese-style bar), the straightforward and gentle sake gave me a moment to unwind and relax.

Kudoki-Ue's spring limited edition sake made with Dewa Sanzu polished to 33% and carefully brewed with No. 10 yeast. When the bottle is opened, a noble fruit aroma like white peaches and muscats wafts through the air. It is not too flashy, yet it is gorgeous and has an exquisite aroma balance that is typical of Kudokibe. In the mouth, a smooth, thick, and dense sweetness spreads. The sweetness is not dull, and the clarity of the sake is a wonderful feature. The freshness typical of nama-zake and the slight gassiness that can be sensed in the mouth help to tighten up the overall flavor, and the taste lingers in the mouth, making you reach for one more glass. It's one of those bottles that makes people ask, "Is it really worth the price?" But after drinking it, you will be convinced that it is indeed a "Junmai Daiginjo that is like a reward. The aroma, taste, and balance are all stable and "a bottle without a doubt.

A bottle of "freshly squeezed" sake, which Kaze no Mori has long pursued by taking advantage of the climate of Gosho, Nara, and using a special freezing technique to lock in the entire bottle. 2021BY Akitsuho 657 was quickly frozen, and after three years the brewer said, "I hope you will enjoy it." This special edition is available only during the Craft Sake Week. The fresh, mellow, and matured sake gave us a sense of new possibilities for Kaze no Mori. When poured into a glass, it has a fruity aroma reminiscent of white grapes and green apples. In the mouth, a clean and smooth flavor spreads softly with bubbles that pop slightly. Sweetness, acidity, and a hint of bitterness overlap beautifully, and the wine has a bright outline and transparency that belies its three-year age. The fresh impression is maintained, and the wine softly and quietly blends well on the tongue. This bottle is a perfect combination of the robust flavor typical of Akitsuho 657 and the roundness and density that only long-term ice aging can provide. It was a sake that carefully embodied Kaze no Mori's cherished concept of "sake that enriches everyday life" with skill and time. For fans of Kaze no Mori, this is a memorable Freeze that will leave them with new impressions and rediscoveries.

A lovely, light bottle reminiscent of the soft spring air. HINA" is the memorable debut of Tobirazumi's "Tobirazumi" series, and this season it is a CSW limited edition "Nakadori Nao Kumi" (directly drawn from the middle). The triple combination of low alcohol (12%), Yamahai brewing, and No.77 yeast gives it a refreshing taste with a strong individuality. The first thing that spreads in the mouth is a bright acidity like lemon or grapefruit. Although it is only 12%, it has a core flavor and a pleasantly satisfying sensation. It has a pleasant and satisfying taste with a light 12%, yet it has some core flavor. As the name suggests, it is a bottle that flutters about like "chicks" in a cute but firm manner. It is a refreshing and refined taste that reminds us of Hirasen's spirit of challenge and Akita's careful handiwork.

This bottle is made with 30% polished rice and extraordinarily high grade Yamadanishiki from Yoshikawa, a special A district, and is bottled by the highest quality and labor-intensive process of bag-hanging and tobira-tori (bottle collection).
