The ginjo aroma rises quickly with subtle fruity nuances. The first sip is light, with a hint of sweetness, and the latter half of the sip is pleasantly sharp and dry. The fresh and clear mouthfeel can only be achieved with freshly squeezed sake. While light in mouthfeel, it has a pleasant core flavor that can only be achieved with 17% alcohol by volume, and the whole is gentle and cohesive, making it an excellent food sake.
It is especially good with salty or savory dishes, and the sake's profile does not lose its edge when paired with fried foods or dishes with miso. It is also attractive when served chilled or slightly warmed, and its expression can be enjoyed depending on the dish and the food.
This sake was born from the efforts of the Hachioji Sake Brewing Project (Hachioji Sake Brewing Project), which was launched to restore the sake brewing culture that once existed in Hachioji. Today, more than 10 farmers grow sake rice, and "Takao no Tengu" is carefully brewed by local people.
It is a sake that allows you to experience the flavor of the land and the thoughts and feelings of the people, and is a true "taste of the town. Enjoy this freshly squeezed sake, nurtured by local nature and human hands, with seasonal flavors.
