This sake was produced by Daisuke Ono, a native of Sagawa Town, Kochi Prefecture. During the brewing season, he visits the brewery and paddles the tanks himself while saying, "Oishunariyo! He also fermented the mash while listening to his own song, "Ameon," which is truly a sake that is full of thought and care.
The rice is polished in a special method called "Genshaped Polishing," which gives it a clear flavor with little cloying taste. It is a gentle and easy-to-drink junmai sake that can be recommended even to those who are not familiar with sake.
