My first organic junmai sake. It was easy to drink with no peculiarities. I think the printing on the bottle instead of the label is also quite nice 😊.
This is a 21BY wooden tag from Okutanba 🍶.
When I arrived at the store, it was already stripped and in the state shown in the photo on the left, but it seems to be sold wrapped in the paper in the photo on the right.
Sake wrapped in newspaper or paper looks delicious 🤤.
The top aroma is slightly sweet.
When you put it in your mouth, it has a moderate sweetness and a mild umami.
You wouldn't even know it was 21BY unless you were told. It was quite a tasty sake. ✨️

The umami of koji malt! It is a full flavor that spreads throughout the mouth.
I thought it was smooth and easy to drink like water, but then I laughed when I read on the online sales site that it is also said to be like water when drunk chilled.
I looked it up and found that it is one of Yamana Shuzo's "natural sake series 0△□□" and that it is called "□tsuchisake" (like Prestige).
It seems that only a few stores carry it, but I want to conquer them all!
It is a freshly squeezed, unfiltered, unpasteurized sake. It is young, dry, and has a sharp taste. It is a sake that makes you feel the end of the year.
