It's the kind of sake brewery that makes you want to be a delinquent and then play basketball. They sell high malic acid producing yeast, and the label is cute. When you put it in your mouth, you can certainly feel the sourness of malic acid. It is surprisingly dry and not very fruity. It is a rather dry sake for a Jun-Gin, with the addition of malic acid. My personal preference: 3.2 / 5

The concept of this sake is a dry taste with umami. It is exactly that. We had it with cherry salmon from Iwate prefecture, and this sake is very good with sashimi. I had this sake from Fukushima, which I like the most, with steamed octopus from Miyagi and wakame from Iwate, and the Tohoku trio. As soon as I put it in my mouth, the sweetness, the ginjo aroma, and the umami ☆☆☆☆ came quickly and made my saliva flow. I'm not sure what to make of it, but I'm sure it'll be great.
