The concept of this sake is a dry taste with umami. It is exactly that. The moment you put it in your mouth, you first get a sharp umami☆☆ and a light acidity☆☆, then a spiciness☆☆, and the aftertaste is smooth and dry. We had it with cherry salmon from Iwate prefecture, and this sake is very good with sashimi. The flavors of the sashimi and the sake do not interfere with each other, but they are interchangeable and entertaining.
