Sake Map

The origins of the sake you've drunk are colored on the map.
Iwanoi純米吟醸山廃原酒生酒荒走り無濾過

It has a pale yellowish color. It has a strong, robust flavor, as is typical of Yamahai, but the aftertaste is rather light and refreshing. The flavor goes well with boiled down sukiyaki. It also goes well with chicken sashimi with garlic sauce. It is not a sake that can be drunk easily on its own, but it can be very tasty if you choose what to drink with it.

A nigori sake with a very ricey taste. It has a bitter astringent taste from the lees and a moderate sweetness, but it has a delicious aftertaste of rice. However, it has a mild and idyllic flavor, so it is a bit distant from each other when paired with a strong-flavored dish such as sukiyaki. Chicken sashimi is also not a good match because of the strong taste of the sauce. It is the best match for spinach, mitsuba, and soaked enoki mushrooms!

The aroma is mild and the taste is not too sweet for an unfiltered sake. It also has a little bit of the weight of the original sake. It goes well with sukiyaki today because it does not lose to strong flavored dishes and does not cancel out their flavors. But if you drink it carefully, you may feel the acidity.

I chose it completely based on the label and it is delicious. The aroma is between gorgeous and refreshing, and the taste is firm with acidity and woodiness. It is still refreshing for a wine that is 80 years old. I paired it with shishamo (Japanese shishamo smelt) and it went very well with it. It also went well with green pepper stuffed with meat miso and scallop sashimi, making it an excellent food wine.

This is a cloudy sake with a lot of lees in it. The aroma is sweet, but the taste is sour, like drinking yogurt. The alcohol content is 18%, so it is very strong. It has a strong flavor, so it is difficult to pair it with rice. It doesn't interfere with rice, but I couldn't find the best match. However, it went very well with the rice part of nodoguro gohan (rice with nodoguro). So it goes well with takikomi gohan. It is delicious.

The aroma is fresh, and if you take a big gulp, it feels quite fresh, but the aftertaste is quite robust. The aftertaste is quite robust, but it is not so heavy that it makes you feel sizzling, so it is easy to drink. I paired it with firefly squid stir-fried with butter and soy sauce, and it was a perfect match. It did not go well with chicken stewed in tomato sauce, but it went well with sashimi.

Very fruity. It has a sweetness similar to green apple that lingers a bit in the mouth. I think there is a slight fizzy sensation in the mouth, just a little bit because it is a raw sake. The sweetness can handle the sweetness of half-boiled egg tsukune. But I wonder if it will win over salmon sashimi and octopus sashimi.

It has been a long time since I have had Junmai Ni-Utsuri. It is a Junmai sake, so it is quite heavy as a Junmai Nitoshi. It is a well-balanced sake that is both gorgeous and refreshing, but if you drink it thinking of a Junmai Ginjo Nitoshi, it is not quite the same. It is heavy to drink on a tired day. But since it is paired with yakitori, the taste is a good match.

The sake does not have much aroma, but has a soft sweetness and sharpness from the first sip. The aftertaste is also mildly sweet. It does not interfere with the taste of food, so it goes well with soaked okra and sushi. It is the perfect food sake for light tasting food. It is not a sake that is extremely tasty on its own, but it goes well with food! It is not a stand-alone sake, but it is a supporting player that goes well with meals.

The first sip is very light and flows crisply. The aftertaste, however, leaves a woody aroma on the upper jaw, and you may feel a slight heaviness. It goes well with scallop sashimi. When I drink it with garland chrysanthemum with aosa (aosa), I feel sweetness. However, it seems that the chicken sashimi is a bit washed out, so it is a strange balance. But after all, Jinya is dry and delicious.

It has a soft aroma of wood and tastes like apples with a refreshing sourness. The aroma is enhanced by drinking it in a deep sake cup, making it even more delicious. At first I thought it was refreshing and light, but the more I drank, the more the flavor stayed in my mouth. It is too good to eat with chicken sashimi (with garlic sauce), which I thought was a perfect match for sake, because it even outshines or rather fights against it. I think something a little lighter in flavor, like lotus root with salt kinpira, would go better with it. I ate the scallop sashimi with a little more wasabi, and it went very well with it.

The first sip has a green apple taste, but it has a weight to it that doesn't pull the aftertaste away, and after drinking a lot of it, the tongue gradually gets tired. It is delicious, but it is not a light, easy-drinking sake. (It is not a light, easy-to-drink sake (strange!). But it is very good as a food sake, and goes well with yuzu-flavored hot pot. Ah! It goes very well with washed cheese and tuna tsukudani! It's a sake for drinkers!

It is said that the sake is kept in a snow cellar warehouse after bottling. It is not too floral, but rather has a sharpness and astringency that makes it easy to pair with meals. It went well with yellowtail shabu-shabu and also with ramen noodles after the shabu-shabu.

It is gorgeous but mildly sweet, and the aftertaste continues to be quite sweet. It does not go well with the raw smell of yellowtail sashimi, but it goes well with yellowtail shabu-shabu. (Or maybe it goes well with ponzu?). But I think it goes better with meat than with fish, and it matched better with samgyetang-style soup.

When I said I wanted to drink this sake hot, the liquor store recommended it to me. I think I was introduced to this sake by the liquor store owner, who said it was not that strong in flavor but had a soft aroma. It is served lukewarm, and while it has a woody aroma, it tastes quite sweet for a hot sake. The sweetness lingers afterwards, so it fights against the fishy smell of sashimi (light fish). It went well with the strong flavored chicken giskan.

The last of the five instrumental Masamune bottles to drink is Shizenigo from the same brewery! It is very fruity and a relative of the instrumental. The aroma in the nose is refreshing, with sweetness and sourness coming first and lingering in the aftertaste. The flavor is rather robust, so it wins over salmon. It was a refreshing match for the chicken tsukune soup. I knew it, but it does not go well with shishamo.

It is a honjozo, but it is still consistently delicious. When I licked it off my finger, I felt a bit of alosoe, but when I drank it with a regular sake cup, I didn't feel it at all. I paired it with a light chicken tsukune nabe (one-pot dish) and it was a great match.

The aroma of this sake is very strong and pleasant on the nose, but it is surprisingly gentle and easy to drink. But when you drink it, it is surprisingly gentle and easy to drink. However, it has a strong acidity, which makes it a unique sake. I drank this sake a few years ago and was a little bit conscious of its peculiarity, but after drinking it over time, I found it to be delicious. It goes well with kiritanpo hot pot, but when I had it with washed cheese, it was a nice, light and lively fight between two strong tastes.

The sake was supposed to be warmed up, so I had it lukewarm. The aroma is not as strong when heated, and it doesn't have the distinctive warming sensation that hits the back of the nose, but it has a mild taste, so even people who don't like hot sake can drink it. It tastes sweet at first, but it has a sharpness to it, with a sourness that lingers at the end. We paired it with a kiritanpo hot pot, and it went well with the light chicken broth and rice.
