We visited the new sake festival of Santan Masamune 😁.
There were a lot of people who are fans of Yamatan Masamune and it was pretty exciting👍.
Since it was my first time to try their sake, I decided to try all kinds of sake at a paid tasting. Here is a summary of my impressions.
Freshly squeezed new sake
Needless to say, it is fresh and has a strong acidity.
Honjozo Shimanami
(1) Honjozo Shimanami has a dry taste with an aroma that is a bit like Honjozo poi or a barrel sake.
(2) Super dry, dry and light.
It is light and dry, and quite refreshing. It is easy to drink and has little habit.
(3) SHIZUKUHIME Junmai Ginjo
Not much aroma. It is a junmai with a strong alcohol taste, but the alcohol feeling spreads to the palate and the taste is firm.
4) Ginjo-shu
Fruity aroma, the opposite of the aroma is the spiciness that stands out.
5) Junmai Daiginjo Matsuyama Mitsui
The ginjo aroma spreads widely. Overall, the taste was refreshing and well-balanced with sweetness.
It seemed to be the most popular.
(6) Daiginjo-shu
It has a ginjo aroma, but it was a little restrained, and the overall impression was very similar to that of ⑤.
⑦Shizukudori Junmai Daiginjo-shu
Surprisingly, the aroma is not so strong, (the aroma itself!) The sweetness is strong and the overall taste is dark.
(8) Natural old sake
Old sake but easy to drink, coffee-like aroma, suitable for aperitifs, but drinkable normally

Matsuyama Mitsui Jun Dai is also a hard sake to throw away 😁.
We had this at a ryokan in Omishima.
The food and drinks were perfect for a tired body after cycling along the Shimanami Highway.... ☺️
The sake was delicious and refreshing and went well with the seafood dishes.
(I had jellyfish sashimi for the first time. ... Amazing!)
Yamatan Masamune Silver Label Matsuyama Mitsui Unfiltered Unrefined Nama Sake, Direct Kumi Betsuatsue, 3080 yen
Today's side dish is Bean-curd soup with Bean-curd soup and Bonjiri Daikon!
The aroma is a sweet ginjo aroma, the first attack is the full sweetness of wasanbon sugar, and as it goes down the throat, the spiciness comes in the mouth, and the sweet and spicy aftertaste lasts for a long time.

Sake made with music vibration technology developed in collaboration with Tokyo University of Agriculture and ONKYO.
By listening to jazz music for several hundred hours during the aging stage, the yeast is activated and the sake has a smooth finish.
The taste is refreshing and ideal for cold sake.
Smells like candy store pineapple or something sweet.
Surprisingly refreshing, with a spodrilla-like texture.
The acidity is refreshing.
It is said that it becomes sharp and mellow when heated.
