Jyushidai Junmai Daiginjyo Ryu no Otoko Daijokijo Nama December 24, 2023 6700 yen After my child's entrance ceremony, I opened a bottle of this one, which had been laying in wait since the end of last year, to celebrate. The aroma is closed off when served cold, but it has a mild aroma of peaches and apples. In the mouth, light carbonation and elegant sweetness spread throughout. The light acidity supports the sweetness, and as you finish it, you can taste the lingering sweetness that you like, as well as the richness and bitterness in the back of the mouth. I was reminded again that this is a delicious sake that I like. It was a great addition to the celebration with Jikin.

Jikin Senbon Nishiki Junmai Ginjyo Nama Shu February 18, 2024 Sake-no-Ten HAYASHI Hanpukai Opened to celebrate a child's entrance to school. Jikin Senbon Nishiki, which we tasted last year as well, has a sweet and sour strawberry ice cream atmosphere, perfect for cherry blossoms in full bloom. The aroma is of yogurt and dry figs, similar to the Sairai we opened the other day. The slight carbonation and lingering sweet and sourness invite the next sip, making it a dangerous sake to keep drinking.

HIROKI Special Junmai Unfiltered Nama Sake January 20, 2024 Sake-no-Ten Hayashi A luxurious fixed point for this time of year. Alcoholic on the palate and spiky on the taste, but a robust, full-bodied drink. As it settles down, it has a banana-like aroma and soft acidity. The soft mouthfeel is followed by the sweetness of bananas. The acidity cuts through the aftertaste, and the juicy, full-bodied mouthfeel leaves a good impression.

Sairai Junmai Ginjyo Betsu Betsu Mutenfuki Nama Shu Nao Kumi March 23, 2024 Sake-no-Ten Hayashi Sairai from Saitama, which had been talked about in Sake-no-wa, was the first to be ordered separately. The aroma of yogurt is obvious when served cold. It also has an elegant aroma of flowers and peaches. When you sip it, the sweetness is preceded by a slight carbonation, followed by sourness and bitterness. The sweetness is impressive, but the sourness and bitterness are not so impressive. The sweetness is impressive, but the refreshing aftertaste calls for the next cup. When served cold, the bitterness decreases as the body tightens, and the light carbonation and elegant sweetness make it a dangerous sake that is easy to drink.

Shirakoh Junmai Nama Shochu Dry 4-Step Brewing March 17, 2024 Kagoya Shimotakaido Store The brewer came to the tasting. It has a fresh mouthfeel with a slight carbonation. The impression of heated sake I had in Hiroshima was dispelled. According to the brewer, it is a sweet and spicy sake. It has a melon-like flavor, with a rich sweet and sourness that spreads out, but has a nice sharpness. We bought a bottle of regular junmai for home use.

Collage Junmai Hatsu Shibori Unfiltered Nama Sake January 21, 2024 Isego Honten 2976 yen A basic junmai, unfiltered nama-shu only available at this time of the year. It has a fruity aroma beyond imagination. In addition to apples, it has a milky flavor. Fresh sweet and sourness spreads on the tongue. The richness is similar to hi-iru, but the lively acidity and aftertaste on the palate are unique to nama-shu. Regular junmai with this taste is the best.

Takeyuu Special Junmai Nigori March 3, 2024 Asahiya Sake Shop 3281 yen Purchased Takeyuki Nigori, which I gave up last time because I was confused with Kido's Nigori. The bottle was opened normally with a perforated stopper. The aroma was grape-like and the carbonation was stimulating. It has a robust drinking experience that is unique to Takeyoshi. More robust than Kido Nigori, it is delicious.

Mutsu Hachisen Bespoke Tokubetsu Junmai Nama-shu January 21, 2024 Sake-Noten Hayashi Hanpukai In addition to grapes, the nose has hints of tropical fruits like mango and coconut. It is reminiscent of a rich flavor, but the mouthfeel is soft and the acidity tightens up the almost dry taste. There is also a slight carbonation, and the aftertaste is clean, crisp, and refreshing. After opening the bottle, the sake gradually opens up to a sweet and sour taste.

Hououmida Junmai Daiginjo Yamadanishiki 40 Araoshi Merger January 21, 2024 Isego Honten 3,400 yen Just after opening the bottle, there is a fruity aroma. When poured into a glass, good aromas of strawberries and apples spread. The mouthfeel is calm, with a hint of sourness on the tongue and a light sweetness. The lingering acidity and umami after drinking are long. Even when lukewarm, the acidity stands up and the umami spreads in a mellow and delicious way. I still prefer the Araoshi merger and will buy more.

Hayaseura Bespoke Tokubetsu Junmai Nama Nama Sake November 19, 2023 Sake-no-Ten HAYASHI Hanpukai Directly pumped but mild both when opened and when poured. The nose is rich and viscous with hints of pear and alcohol. The acidity is prevalent and spreads quickly, and the sake seems to rush into the mouth like a big lump, and it is swallowed with great vigor. The lingering aftertaste on the nose is good, and the sharpness of the sake keeps you going with the next sip. The second half of the bottle is left at room temperature and drunk hot. As always with men's sake, it goes well with sashimi.

Kido Junmai Ginjo Nigori Sake Nama February 3, 2024 Asahiya Sake Shop 2750 yen We went to the sake shop for Kido Nigori, which we enjoyed last year. It was easy to open the bottle with a perforated stopper, and I had to drink it quickly before the shwash was gone. Even though it is mixed with nigori, it has a smooth taste, a grain and rice aroma, and a full-bodied mouthfeel. The carbonation is stimulating and the sourness is accented by the acidity. The sweetness is moderate and makes the drink go further.

Takayuu Junmai Daiginjo Shohei Otani Memorial Sake February 2, 2023 Junmai Daiginjo from Takayuu Tottori. We had a rare Shohei Otani commemorative sake. It has a broth-like aroma typical of Tottori sake and a gorgeous aroma. When served cold, the umami spreads slowly on the tongue, giving it a full-bodied flavor. As the temperature rises, the aroma and flavor open up and become full-bodied. It is a sake that you will want to warm up, which is different from a sake that is only gorgeous.

Kawanakajima Junmai Nigori December 17, 2023 Isego Honten 2400 yen I have a memory of receiving this sake from a female toji at a tasting before my child was born. It is a mellow, cloudy sake with a deliciously smooth finish that cuts right through the aftertaste. She recommended my wife to try it, but I still remember when she looked at my stomach and noticed it. Since then, it has become a popular brand and I have rarely seen it, but I bought it for the first time in a while. The second half is richer than the first half, so I enjoy it with soda.

Kamo Nishiki Shagafuda Sake Junmai Daiginjo Tankoba Kumi December 17, 2023 Isego Honten 2982 yen The second bottle for New Year's Day is my favorite shakufuda-shu. The bottle opens gently but there are bubbles in the glass. Good voluptuous aroma like strawberry ice cream reminiscent of Jikin Senbon Nishiki. Slight carbonation, light acidity, and strawberry sweetness spreads and disappears quickly in the aftertaste. It is still my favorite sake.

Koei Kiku Snow Cresent Yamadanishiki 2023 December 23, 2023 Sake-no-Ten Hayashi Koei-Kiku, popular in recent years, 2024 selected for New Year's sake. The cork popped with a loud noise and the bubbles came up to my mouth, so I hurried to avoid them in my glass. The bubbles were as zippy as champagne. The nose is clean with grapes and citrus fruits, and the sweetness follows the acidity on the tongue. The acidity appears on the tongue and is followed by sweetness.

Yamashiroya Standard Class Bespoke Orikagarami Nama Sake December 23, 2023 Sake-no-Ten Hayashi A new all-new brand of sake from a brewery that has been in Tochio, Niigata since 1845. Orikagarami with fine orikage dancing in the air. Nice aroma of greenish white grapes and rice flavor. It also has a refreshing herbal flavor. The mouthfeel is soft and the acidity spreads slowly, followed by a light sweetness. The finish is refreshing, with a slight bitterness and astringency. When heated, both the aroma and taste are acidic, giving it a robust drinking experience.

Senkori Snowman December 28, 2023 I had it with a mouthful for the last dinner of the work week. It has a nigori rice flavor with a sweet and sour aroma like calpis. The bottle has a hole in the top, but you can feel the carbonation. It is a light nigori sake with a dry taste contrary to the image of Sengoku.
