It wakes up energetically with bubbles when poured into a chirori. It has a sweet aroma similar to that of Chihin Buyu, which gives it a strong flavor. When you sip it, the carbonation is pleasantly stimulating, and you feel dryness and bitterness. The acidity and sweetness finally show up in the aftertaste. The light bitterness and sweetness in the aftertaste is sharp and gives a good impression of cheese.

Long time no mobeji. Flavor of rice and grains with a hint of alcohol and a hint of aroma. Punchy mouthfeel even when served cold, rich acidity and full-bodied, complex flavor. I like the sharpness that only Akizuka can give. It was delicious when heated up halfway through. One star was deducted because of the negative flavor on the palate.

When served cold, the mild acidity and soft sweetness in the back of the mouth calls for the next cup. I prefer it to Tobiroki, which has a gorgeous impression. Compared to Tobiroki Jungin Black Label, I preferred this one.

It has a strong carbonation and a moderate acidity, but the dry mouthfeel is quick and refreshing. The impression is of a watermelon flavor, perfect for summer. Kaze no Mori Omachi 807 July 16, 2023 We ordered a freshly opened bottle of Kaze no Mori recommended for drinking outside. Omachi 807 is a sake brewed with 80% polished rice and No. 7 yeast. The description of this sake seems to have changed since I used to enjoy it. It has a melon-like aroma, a slight carbonation, and a mellow sweet and sour, fruity taste that I like. It was very tasty, and I realized once again that it is my favorite sake.

It has a fruity and gorgeous ginjo aroma. The mouthfeel is soft and sweet. As it is downed, the acidity quickly reveals itself, leaving a full-bodied, alcoholic finish. On the second day, the alcohol becomes milder and the aroma and mouthfeel are similar to those of Izumikawa.

It has aromas of grapes and melon, but on the palate it tastes like bananas. On the palate, there was a slight carbonation. The acidity is smooth and light, and the acidity in the aftertaste flows beautifully, making the next cup go down smoothly. This is a light sake suitable for summer.

Kudokibe Junmai Ginjyo Namaizume Sake Mirai May 14, 2023 Sake Mirai was revived by Takagi Shuzo of Jyushiyo. We encountered it at an outing and had it at the first sip. It has a light ginjo aroma and a smooth acidity. It has a sweetness, but it is refreshing. It was a slightly different impression from the original Jyushiro, but it was a delicious sake.
