Kangiku Junmai Daiginjo Unfiltered Nama-shu Sunny Day-Special Yell March 8, 2025 Isego Honten 3850 yen A bottle brewed with "Yamadanishiki and Akaban Omachi". It is a bottle to support all those who are starting a new journey, starting a new year, or starting a new chapter in their lives. The label is decorated with a motif of wings and the sun with a wish to encourage everyone's back. The fruity aroma is reminiscent of apple honey and strawberries. Slight carbonation and acidity, soft and mellow sweetness. The sweetness lingers in the aftertaste. Compared to Aizan, the impression is similar, but Aizan has a more lingering sweet and sour taste. Both are very good sake.

Eiko-Fuji Junmai Unfiltered Nama-Shu, Akebono-Yuki March 8, 2025 Isego Honten 2750 yen This ogara-mi sake is made from local food rice "Haenuki". The opening was gentle, but the carbonation was lively enough to make the pour soar. Fruity aroma with a hint of apple. The negative sake level made me imagine it would have a sweet taste, but it had not only sweetness, but also carbonation, grape-like acidity, and a bitter aftertaste that kept the sake flowing. The flavor and richness of ori (rice powder) is also to my liking. It is also very cosy, and I thought about buying it again, but it was sold out. We enjoyed it while looking at the hina dolls still on display according to the lunar calendar.

Ooganbun Junmai Genmai Sake Tank Pressing March 15, 2025 Bajo Sake Brewery in Kumano-cho, Hiroshima Prefecture, named after the "Great Decree of Restoration of the Monarchy". I saw it on the shelves of a major supermarket in Hiroshima, but my favorite liquor store did not carry it and I ended up not drinking it. The brewery has made a fresh start since 2021 with the appointment of a new chief brewer, Kazuya Murakami, who trained at the Taketsuru Sake Brewery and Yamatoya Sake Brewery. I met him in Tokyo and had the first taste of the new sake. The aroma is moderate, and the taste is centered on acidity, with the soft sweetness of Hiroshima sake spreading through.

Kangiku Junmai Daiginjo Unfiltered Nama-shu Aizan RedDiamond February 15, 2025 Isego Honten 3850 yen A gorgeous, rich, sweet and sour aroma spreads in the glass. In the mouth, carbonation and fruity sweetness spread freshly. The sweetness is preceded by a soft acidity and bitterness, and as it is swallowed down, a sense of fruitiness passes through the nose. The richness of the aftertaste is good, which may be a characteristic of Aizan. When chilled, the carbonation increases the dryness. It may be a characteristic of Aizan, or it may be similar to the Aizan sakes that have given a good impression on the palate.

Selfishly, the name of the flower gives an impression of the flavor, which makes me avoid it. Tasted cold, the flavor was tight and the carbonation on the palate, as well as the sweetness and acidity, were both pleasant.

Ohmine Junmai Daiginjo Unfiltered Nama-shu Aizan February 15, 2025 Isego Honten 3960 yen Comparison with Ohmine Dewa Sanzan. The aroma has a nice flavor of rum and grapes, and the mouthfeel is slightly carbonated. The sweetness on the tongue is followed by an impressive acidity. The taste after drinking is well-balanced with acidity, sweetness and bitterness. Compared to Dewa Sanzan, it has a richness and a long sweet aftertaste. As the temperature rises a little, the aroma spreads with a bang and the flavor increases in volume, making it delicious.

This is a regular sake made from rice called Nikomaru. Strong lactic acid aroma. The sweet and sour mouthfeel is impressive. The impact of carbonation and the well-balanced taste of acidity and sweetness, with a good aftertaste, leave a good impression.

Hiran QUEEN Nikomaru Unfiltered Nama Sake February 22, 2025 Kagataya Sake Shop Spring Sake Tasting 4 gou 2,750 yen This was the first time for me to taste sake from Hirado City, Nagasaki Prefecture, and also the first time for me to taste rice rice called Nikkomaru. It is a high-class sake brewed with rice polished to 25%. Although I tasted only a small amount, the sweetness was impressive and had a strong impact on the palate.

Hououmida Heki-ban Junmai Ginjo Unfiltered Nama-shu January 2, 2025 A friend of mine in Oyama brought this Heki-ban to a New Year's party. We have already confirmed its deliciousness at the new sake tasting. It has a fruity aroma typical of Hououmida, and when you put it in your mouth, the sweetness spreads to a grape-like fruitiness. The soft sweetness and sourness is accompanied by the bitterness of new sake. We once again realized the deliciousness of Hououmida.

Tsuki no I Junmai Unfiltered Nama Sake Hitanishiki February 5, 2025 Drinks with friends in Kichijoji. We had a bottle of Ibaraki Tsuki no I, which was made by the toji Ishikawa, who moved from Hiroshima Taketsuru. It is an amber-colored sake that looks good warmed up, but it is easy to drink cold and goes well with tsumami. While it was easy to drink, I was surprised to see the alcohol content of 20%. I was tipsy in the cold.

The hard, carbonated mouthfeel is preceded by a sourness, which gradually gives way to sweetness and bitterness. It tastes like a rummy, and although the richness is modest, it is very drinkable without making you feel the low alcohol content. I always like this sake. Let's try the other specs.

Akirika Junmai Araogoshi Nama Sake January 18, 2025 Isego Honten 2695 yen Akishika is a crisp and sharp sake that looks great warmed up. This is a nigori sake that I wanted to try. The hole in the stopper makes it less shwashy, so we started with the light nigori-nigorizumi supernatant. It has a graininess of rice aroma and a full-bodied taste with a sharpness. The sweet-sourness and richness increase when the nigori is mixed, but the sharpness is still there. When heated, it has a sweet aroma like that of roasted sweet potatoes and chestnuts, and the flavor and acidity are sharp and crisp. I like this flavor of Akizuka.

Ohmine 3 Grains Unfiltered Nama Sake Dewa Tsanzan January 18, 2025 3630 yen Isego Honten Good aroma of bluish fruit. Milky and herbal flavors as well. Chilli, slightly carbonated, fruity and refreshing sweetness and acidity like grapes. After the drink is downed, sourness and bitterness linger in the aftertaste. The back palate is slightly sweet and full-bodied. We recognized once again that it is a well-rounded and tasty sake.

Kudokibe Junmai Daiginjo Shiboritate December 31, 2024 Asahiya Sake Shop 3,520 yen Kudokibe is a sake that we have received in the hanpukai and have recognized as a delicious sake. This was the second bottle of Shiboritate I opened in the new year, and when I first learned that the brewery was 100 years old, I wanted to continue to support it. The aroma was fruity with sweetness and sourness like strawberries and pineapple. It has a sweet and sour mouthfeel with a slight carbonation and a fluffy sweetness. It has a robust mouthfeel with a full-bodied flavor that I like.

Toukishi Honjozo Nigori Activated Nama Sake December 21, 2024 Asahiya Sake Shop 2470 yen The supernatant had a fruity aroma, but when the nigori was mixed, it had a rich aroma of rice and sweet sake. Slight carbonation is felt in the mouthfeel, and sweetness and bitterness rush in. The acidity is mild and the aftertaste changes from sweetness to richness. It is the first real nigori in a long time. It would be good with soda.
