Uguisu in the Garden: Special Junsei Shiboritate November 16, 2024 Kagataya Sake Shop New Sake Tasting I bought this Garden Uguisu five years ago after liking it at a sake tasting. Milky aroma that I felt the last time I drank it. Mellow and full-bodied without feeling like new sake on the palate.

Gikyo ORIGARUMI Junmai Nama-zake November 16, 2024 Kagataya Sake Shop new sake tasting. Both the aroma and taste had a strong rice flavor, and the lingering full-bodied aftertaste had a strong impact on the palate. The taste was robust as one would expect from Gikyo, but when tasting the opening of the mouth, a carbonation was felt and the light mouthfeel was unexpected. I wonder if it is coming closer to the flavor of today.

Akabu Junmai NEW BORN November 16, 2024 Kagatuya Sake Shop 3520 yen I liked the taste of the Honjozo at the tasting event, so I rekindled my disappointment when I missed out on buying it the other day because it was sold out at another liquor store... After the tasting, I looked in the store and happily found the restocked Akabu Junmai! I bought it immediately. The aroma was sweet and fruity, like greenish apples. It is delicious with a slight carbonation and a refreshing sweetness that spreads in the mouth.

Akabu F NEW BORN November 16, 2024 Kagatuya Brewery New Sake Tasting I was going to buy the first lot of Akabu's new sake but couldn't because it was sold out. I was glad to come across it at the tasting. The pleasant aroma, the carbonation felt on the palate and the bitterness on the back end made a big impact. The taste of this new sake, which is a honjozo, gives us a great impression of what to expect from this season.

Northwest Shuzo Prototype Honjozo Nama Sake November 9, 2024 Isego Honten 2400 yen This is an original Prototype from Isego Honten, which we had a good impression of when we drank it in June. In addition to the yogurt-like aroma of Sairai, it has a sweet aroma with a hint of viscosity. The production date indicates that it has been aged for about half a year. After the carbonation on the palate, the sweetness spreads, and the bitterness tightens up. I wonder if it will tighten up a little more when the temperature drops. In any case, the taste is satisfactory for the price.

Iraka Iraka Gin Kuro Birth Sake November 16, 2024 Kagataya Sake Shop First new sake tasting in 5 years. The first was a new brewery started by a toji from Oshinshu who took over a 350 year old brewery in Nagano Prefecture. It has a fruity aroma with a hint of sourness, a carbonated mouthfeel, and a refreshing finish. It has a modern taste, but the full-bodied flavor comes off too quickly and gives a thin impression. I feel that the quality of the sake is what you would expect from a modern sake, but at this price, I would not buy it.

The aroma is grain-like with hints of rice and mochi, and there is a slight spice flavor. In the mouth, rice flavor, soft sweetness, and sourness spread, leaving a rich, grain-like aftertaste. It is also delicious slightly warmed.

Hiroshimaya Gihachi Junmai Omachi Nama Sake October 26, 2024 Asahiya Sake Shop 2999 yen Asahiya Sake Brewery's original Omachi draft sake brewed by Takehara Seikagami's brewery. It has a sweet aroma like Japanese pear and a soft mouthfeel. It has a soft mouthfeel with a sweet aroma like a Japanese pear and little acidity, and a rich and slightly bitter finish. I had avoided it since the last time I tasted it because I did not like the flavor, but since I was able to taste it, I bought it to confirm the flavor. It was my first Hiroshima sake in a long time, and it was delicious.

Chokaizan Bespoke Junmai Daiginjo Unfiltered Nama Sake September 21, 2021 Kagataya Sake Shop 3300 yen Just by opening the bottle and pouring it, you can smell the fruity aroma. It has a juicy flavor with a milky aroma. When you open the bottle, you feel a slight carbonation, but when you sip it, you can directly feel the sweet and sour taste, and when you swallow it down, you can feel the sourness and richness, but it cuts through quickly. The slight bitterness in the finish resets the palate. It is a well-balanced and delicious sake, and the saké goes on and on.

Ichinenfudo TABIBITO601 Junmai Ginjo Unfiltered Nama Sake August 31, 2024 Asahiya Sake Shop 3080 yen This is a new release from Aichi Horaisen's other brand Ichinenfudo. Tasted and purchased a silver one with No. 6 yeast instead of the same yeast as the empty one. Impactful citrus and creamy aroma. The mouthfeel starts with a soft sweetness, followed by a sourness that spreads. The full flavor is followed by a lingering aftertaste. There is a little bit of a tangy taste.

Hououmida Junmai Daiginjo Asahimai 40 Araoshi Merger Kasumi Hon Nama August 31, 2024 Asahiya Sake Shop 3520 yen From the opening of the mouth, the aroma of apples and strawberries wafts through the air, starting with a light acidity that spreads sweet and sour throughout the palate. You can feel the brand's character straight away. It is full-bodied but has a good sharpness, and the glass is quickly emptied. I had no idea that Asahi rice, which we usually eat, could be used to make such a gorgeous sake. The same good impression as last year.

Fukuda Fukkai Bangaishu August 11, 2024 Asahiya Sake Shop 2970 yen Fukkai was rebranded by Fukuda in Nagasaki. I had previously tried Fukuda Bangaishu and gave it 3 stars, so I wasn't really attracted to it, but I was again attracted to a sake made with rice outside the same range, so I bought it. When I poured it into the chirori, it started bubbling and had a nice aroma like sweet candy. Unlike the image of the aroma, the sour-sweet flavor was subdued and the carbonation added a drier feel. The taste has a hint of Japanese pear, and while it is sharp, it does not have much richness or umami.

Kinryo Junmai Ginjo August 16, 2024 Purchased on a trip to Kinpira. Toured the brewery and saw the magnificent camphor tree; this was my third visit to Kinpira, but I may have visited every time. The aroma was moderate, but the sweetness and acidity were just right, and despite being a regular sake, it was better than I expected.

Etsukaijin Junmai Ginjo Blue Bottle August 17, 2024 Trip to Kinpira with my parents. At dinner at the hotel, there was a blue bottle of a local summer sake from Etsukaijin, so we had it. Fudo Junmai Ginjo Hanging Shibori-Non-filtered Nama-shu August 11, 2024 Asahiya Sake Shop 3080 yen The first sip has a sourness like plum wine with a sweet, candy-like, viscous aroma and mouthfeel, with a taste of sourness and alcohol. On the second day, the aroma becomes more fruity and the balance between acidity and sweetness improves, but as the temperature rises, the viscosity returns and the taste becomes dull.
