Shinsei colors Cosmos December 31, 2024 Asahiya Sake Shop 2680 yen The first sake of 2025 is Shinsei. And I noticed it was 400 check-in. The aroma is citrusy and sour with a hint of ume plum right after opening the bottle. The sourness gradually spreads in the mouth, and the sweetness is moderate. The sourness lingers in the refreshing mouthfeel, but quickly disappears.

Houou Mita Red Edition Christmas SP Light Nigori December 21, 2024 Asahiya Sake Shop 3960 yen Strawberry aroma when the bottle is opened, and the good fruity aroma typical of Hououmida spreads with a bang in the glass. Flavors of apples and green grapes, the mouthfeel is sourness ahead in the supernatant, and sweetness when nigori is added. A fruity sweet-sourness spreads on the palate, leaving a robust richness as it is swallowed down. I had been satisfied with Jun Oyamadanishiki 40 with the back brand, Araoshi Merger, but the red version of the front brand was amazing.

Goho Kitashizuku 50-50 Nama Sake December 28, 2024 Sakuramoto Shoten 1980 yen First trip to Hokkaido in a while. Visited Sakuramoto Shoten, which I had seen on Instagram. It was a modern store, and the store was busy with people coming by car as it was the end of the year. There was a brand I wanted to drink, but I selected a stylish looking local sake from Hokkaido. Sweet aroma of melon and candy. In the mouth, it is fruity, but the sweetness is mild, accented by sourness, and the bitterness finishes the palate. Hakodate Brewery is the 14th sake brewery in Hokkaido, established in April 2021 for the first time in about 35 years. It is the only sake brewery in Hakodate and southern Hokkaido.

Genmai Honjozo November 9, 2024 Isego Honten 2500 yen The ginjo aroma is not flashy, but it has a melon-like ginjo aroma and a slight alcohol taste. It has a refreshing mouthfeel, but the sweetness gradually spreads as it is swallowed down. There is a slight bitterness in the aftertaste. A good brand for everyday drinking. When warmed up to lukewarm, it has a mild and clear flavor that you can drink all the time.

Slightly sour and sweet on the palate. It has a dry mouthfeel with a carbonic acidic kick. The lingering taste is full-bodied and sweet, with a bitterness typical of new sake.

出雲富士　特別純米一回火入　國平米雄町 2024年11月29日 籠屋下高井戸店 3410円 國平氏が赤磐で作る雄町米を使って出雲富士が醸す籠屋オリジナル純米酒を生と火入の飲み比べ。 冷えた時は生酒と香りの違いが分からなかったが、温度が上がると米の風味を感じる。口にすると穏やかな酸味、後口に僅かに苦味とコクを感じる。冷たいと味わいが薄く感じたが温めたら雰囲気が変わるかも。

Izumo Fuji Tokubetsu Junmai Nama Kunihiraume Omachi November 29, 2024 Kagoya Shimotakaido 3410 yen A comparison of two of Kagoya's original junmai sake brewed by Izumo Fuji using Omachi rice produced in Akaban by Kunihira. The raw sake has a mild aroma with a hint of sourness. The sourness spreads softly on the palate like plums. The taste is light, but the lingering acidity is followed by a candy-like sweetness.

Carbonated mouthfeel, with sweetness preceding and sourness following. After tasting other new sake, the taste left a lasting impression. This is a great taste for the price. I bought it immediately after the tasting.

Hououomida Heki-ban Junmai Ginjo Unfiltered Nama-shu November 16, 2024 Kagataya Sake Shop New Sake Tasting Heki-ban has a good impression every year. The fruity aroma is typical of Hououmida. The acidity on the palate has impact. The scale of taste is larger than that of Hatsushibori, which we compared. It is full-bodied and has a bitterness typical of new sake.

Gikyo ORIGARUMI Junmai Nama-zake November 16, 2024 Kagataya Sake Shop new sake tasting. Both the aroma and taste had a strong rice flavor, and the lingering full-bodied aftertaste had a strong impact on the palate. The taste was robust as one would expect from Gikyo, but when tasting the opening of the mouth, a carbonation was felt and the light mouthfeel was unexpected. I wonder if it is coming closer to the flavor of today.

Akabu Junmai NEW BORN November 16, 2024 Kagatuya Sake Shop 3520 yen I liked the taste of the Honjozo at the tasting event, so I rekindled my disappointment when I missed out on buying it the other day because it was sold out at another liquor store... After the tasting, I looked in the store and happily found the restocked Akabu Junmai! I bought it immediately. The aroma was sweet and fruity, like greenish apples. It is delicious with a slight carbonation and a refreshing sweetness that spreads in the mouth.

Akabu F NEW BORN November 16, 2024 Kagatuya Brewery New Sake Tasting I was going to buy the first lot of Akabu's new sake but couldn't because it was sold out. I was glad to come across it at the tasting. The pleasant aroma, the carbonation felt on the palate and the bitterness on the back end made a big impact. The taste of this new sake, which is a honjozo, gives us a great impression of what to expect from this season.

Northwest Shuzo Prototype Honjozo Nama Sake November 9, 2024 Isego Honten 2400 yen This is an original Prototype from Isego Honten, which we had a good impression of when we drank it in June. In addition to the yogurt-like aroma of Sairai, it has a sweet aroma with a hint of viscosity. The production date indicates that it has been aged for about half a year. After the carbonation on the palate, the sweetness spreads, and the bitterness tightens up. I wonder if it will tighten up a little more when the temperature drops. In any case, the taste is satisfactory for the price.

Iraka Iraka Gin Kuro Birth Sake November 16, 2024 Kagataya Sake Shop First new sake tasting in 5 years. The first was a new brewery started by a toji from Oshinshu who took over a 350 year old brewery in Nagano Prefecture. It has a fruity aroma with a hint of sourness, a carbonated mouthfeel, and a refreshing finish. It has a modern taste, but the full-bodied flavor comes off too quickly and gives a thin impression. I feel that the quality of the sake is what you would expect from a modern sake, but at this price, I would not buy it.
