I bought this Yamakawa Mitsuo rice during my recent expedition to Yamagata, Japan. It is said to be made from an ancient rice called Sobei Souhei, which is the parent rice of Kame-no-o (I did a little research).
It has a light summery mouthfeel, a little sweetness, and a good acidity. A little spicy to finish. It is a sake with a good balance, or rather, a good saline taste.
The event was the "Yamagata Fair, Japan's Best Sake Prefecture", and we were able to sample some fresh Jyushidai sake.

The taste was different from the last time I drank it. It tastes like a mild, mellow, umami-drizzled sake...isn't this the same as my impression of the previous one? But it is delicious.
I was able to buy it, a.k.a. Kinkame (not an abbreviation of King Kamehameha). The other day, I went to the Okazaki Sake Brewery again, and there it was again... Kinkame, thank God, and I bought it immediately.

I found Masukagami in the neighborhood (in Kamo city) of the liquor store I stopped by last week when I went shopping in Niigata (Echino Yukitsubaki is also in the neighborhood). Of course, the liquor store also had Muskagami, so I bought it.

The rice seems to be unusually (dare I say it?) polished to 90%, but I can see why...it's a winner...wonderful!
