It has been a long time since I last had a yamori, although I refrained from doing so because the taste had changed so much.
I am looking forward to seeing what kind of changes there will be now that it is a fire-retardant type.
Last time, it was directly pumped, so the acidity was too pronounced and I didn't like it very much. But this time, the acidity has been lightened by the aging process, and at the same time, the heaviness has been added, which is just right. When you put it in your mouth, you will feel a slight tanginess and sweetness. Then comes the spiciness and sourness. Toward the end, there is a bitter taste and the pungent taste remains.
I used to avoid the fire-brewed types because they were too heavy, but this one is just the right thickness for when the weather gets a little chilly. It made me want to try a different spec next time.
