Junmai Ginjo, Kojun. It has a very strong umami flavor, but it is also a little too strong and tart for my liking. If you want to drink it, a single gou is enough.
Junmai Ginjo, light and dry
It has a rich, yet refreshing taste. It is orthodox light and dry. Good for the beginning of drinking and suitable for the first half of a party.
Junmai Ginjo. A local Sagami's famous sake that has a delicious flavor and is easy to drink without any habit. The body has a minimum of thickness, and the taste is never light.
Honjozo. I could tell that the taste would never get old, but there was not much that shined through. I may ask for it next time when I forget about it.
Junmai. The most recommended dry sake at the store. It has a tame flavor for its popularity, but it is a good mid-meal sake, and goes well with rich, fatty side dishes. Also good with fried seafood.
Daiginjo. Both umami and pungency are strong, but the body is relatively light, which may be its character. Contrary to the instantaneous impression, there is not much that lingers afterwards.
Very tasty. It is very refreshing and you will drink too much of it. I read that it would be better to drink it in the flower cooler, but I haven't verified it yet. I honestly thought, "I'll stop here because I have another one today, but if it's true, I'd like to drink a lot more.
Daiginjo. It was selling very well on the shelves of Seijo Ishii, and I bought the last bottle when I saw this. It is a beautiful sake with an easy-to-understand flavor that makes you feel it is delicious at first sip. I think it goes well with just about anything, but I felt it did not need to be paired with anything in particular. I heard that this brewery was the subject of the manga "Natsuko's Sake" (Natsuko's Sake).
Junmai Daiginjo, new sake. It is a dry sake with a clear aftertaste, as it aims to be the ultimate in sharpness. It is elegant without being cloying, but it is surely a taste for sake lovers only!
Nama Sake. It has a mouthfeel like fresh juice, but with the richness typical of nama-shu. It has a thin, delicate flavor. It would be a misnomer to call it a feminine favorite, but it may be a taste that everyone can enjoy.
Junmai Ginjo. It is best to drink it very cold. It has a strong umami taste, but it is slightly bitter if drunk lukewarm. The more it is cooled down, the more it becomes more sophisticated.
One of my personal best regular sake, I can drink it every evening and not suffer. It has a mild sweetness, but the aftertaste is clean and spicy. It is not flashy, but that is what is good about it. I like to drink it cold with a wide-mouthed sake cup. It is said to be the northernmost sake brewery in Japan.
Umakuchi Junmai. It is an everyday sake with a juicy acidity that is addictive, and goes well with sashimi and oden. The flavor is fruity and unique, but you will never get tired of this sake. A favorite of 2023.
A delicious, dry sake that is the opposite of Hamachidori Ginga. The taste is not boring, and it is suitable as a regular sake. The impression is not as strong as the other two.
