Daiginjo. It was selling very well on the shelves of Seijo Ishii, and I bought the last bottle when I saw this. It is a beautiful sake with an easy-to-understand flavor that makes you feel it is delicious at first sip. I think it goes well with just about anything, but I felt it did not need to be paired with anything in particular. I heard that this brewery was the subject of the manga "Natsuko's Sake" (Natsuko's Sake).

Junmai Daiginjo, new sake. It is a dry sake with a clear aftertaste, as it aims to be the ultimate in sharpness. It is elegant without being cloying, but it is surely a taste for sake lovers only!

Nama Sake. It has a mouthfeel like fresh juice, but with the richness typical of nama-shu. It has a thin, delicate flavor. It would be a misnomer to call it a feminine favorite, but it may be a taste that everyone can enjoy.

One of my personal best regular sake, I can drink it every evening and not suffer. It has a mild sweetness, but the aftertaste is clean and spicy. It is not flashy, but that is what is good about it. I like to drink it cold with a wide-mouthed sake cup. It is said to be the northernmost sake brewery in Japan.

Umakuchi Junmai. It is an everyday sake with a juicy acidity that is addictive, and goes well with sashimi and oden. The flavor is fruity and unique, but you will never get tired of this sake. A favorite of 2023.

A delicious, dry sake that is the opposite of Hamachidori Ginga. The taste is not boring, and it is suitable as a regular sake. The impression is not as strong as the other two.
