The smell is Shaoxing wine gutsy. If you feel it in your throat, you can also taste the dry gusto. The taste is similar to Shaoxing wine. It is so much like Shaoxing wine that you may feel that it would be easier to drink if you add some coarse rice wine. However, you can taste the umami that is not found in Shaoxing wine.

It is a sake that wells up from the bottom of the stomach and goes down the throat with a full alcohol feeling, but its soft sweetness whispers to you that it is not true. Excellent. I had never heard of this sake before, but it is a sake that has been made into a domaine with integrated production control from the raw materials. The refreshing acidity and the most wonderful thing is the clean aftertaste. There is absolutely no stress or unpleasant taste. I was impressed by this.

They can only be bought in Yamaguchi Prefecture. I drank it at Kobe Inazuma. Although it is 17% alcohol, it has a refreshing umami, pineapple-like fruitiness, and the high alcohol content leaves a dry feeling in the aftertaste. If I had not had a bottle of Jyushiyo before this, it would have been the best sake of the day.
