2023年春頃から上司(自称日本酒マイスター)の影響で日本酒が好きになりました。フルーティ系で甘いやつが好きです。 後味が苦味や辛みでスッキリしてるタイプも大丈夫。終始辛いのは苦手なのでしっかり見極め、のんびり全国制覇目指します。 北海道在住。上司の推し店は日本酒原価酒蔵さんです。私も出張先でついて行きましたが素晴らしい。あの店北海道に欲しいなぁ。

I opened a bottle of Matsu no Tsukasa that I got at a sake meeting held on the 3rd. I was very excited to try this sake, which I would never buy by myself. At the sake meeting, it was served hot, but I decided to drink it cold for now. Cold sake has a spicy and crisp taste. The sweetness is moderate and not sweet enough for my taste. I thought that the spiciness and the tanginess stood out, but when I tried it hot (lukewarm), the spiciness and the tanginess mellowed out and the taste changed completely. It's delicious. It is easy to drink. I was very satisfied to find that this kind of sake also exists.

Last week I went to an izakaya in town for a long time. I had a chance to drink Niseko, a rather standard local sake of Hokkaido, so I did. It was supposed to be spicy, but it was drinkable. It is not too sweet, but refreshing and a little strong in alcohol. We all drank a little bit.

For the finale, I decided on Kuroemon XVI. Since it was Aizan, it was not too sweet, but it was easy to drink due to its low alcohol content. I checked the description of the sake and found that it was Yamahagasa, but I didn't mind. It was a very satisfying sake party, and I wanted to finish it off with something a little lighter. At the last raffle, we won a bottle of Matsu no Tsukasa. It looks somewhat spicy, but I will open it when the time is right.

I asked the person in charge of the sake meeting for a recommendation for an easy-drinking sake, and he recommended Jiri, so here it is. It is easy to drink, although it is spicy. It is loose but fresh, and the initial taste is not bad. I would like to try it again when I go to Kushiro's nightlife district.

It is a hana-yosu. The sake rice is different from the one we drank before, so we are looking forward to it. The aroma is strong and smells good even in a cup. I felt the alcohol taste was a little strong. It is an easy-drinking green apple type of sake, but I thought the Hachitan-nishiki was a little spicy.

This is Yuho from Ishikawa Prefecture. Ishikawa Prefecture is worried about many things due to natural disasters. I drink it while imagining how precious it is, but it is the type where the pungent taste comes first. The sweetness comes quickly, so I thought it was easy to drink, but it has a strong alcohol taste. I wonder if the alcohol content is too high.

Wakanami. Compared to the other two bottles I drank earlier, the first one hit me first. The sweetness of the Omachi rice stands out and the sweetness of the rice, rather than the fruitiness, makes it easy to drink. The spiciness is normal and comes first.

When I went to a liquor store to purchase tickets for an upcoming sake meeting in my hometown, I was surprised to find a bottle of Shinmasa Cosmos on the shelf. Cosmos was the pioneer of getting into Shinsei. It was also reasonably priced. With so little on hand (now's your chance, right?), I bought it immediately. We drank a glass of the wine at home with delight. The fruity, wine-like taste of the sake comes in like water, with a nice accent of the impurities of junmai sake, followed by the sweetness, and the sweetness of the No. 6 yeast is irresistible. As I taste it, the inside of the cup goes faster than the rest of the sake. Before you know it, half of the four-pack is gone. This is the cosmos of Shinmasa. I can't stop, I can't stop. I think it should be my personal No. 1 or No. 2. It is delicious. If you have a chance, please give it a try.

I came across it while I was at the liquor store to check out the items and bought it immediately. I got lucky with the last bottle at this store. It is a different sake rice from Toyo Bijin, this time Hakutsuru Nishiki. This is a limited edition sake made from Hakutsuru brewery's sake rice. I tried it right away and found it to be sweeter than the other Toyo Bijin. It is not a fruity sweetness, but more like the taste of the ingredients, like cotton candy or mizuame. It is still easy to drink and tastes great with almost no pungency, but it is still sweet. It is a top candidate among the ones I have had so far.

We went to an izakaya in town to celebrate the renewal exam. I wondered if they had any sake, but they had Kitanokatsu, which I had never had before. I immediately tried it for the first time. I thought it might be too spicy with a 70% rice polishing ratio, but it was surprisingly easy to drink and tasted good enough for grilled meat. There was also a bottle of Ottersai, so I was happy to compare them. The person from Nemuro said the limited edition sake was even better, so if you have a chance, try it.

Fukushima Prefecture is known for its Sharaku, but Hirotogawa is just as good. When you open the cork, you can smell the sweet aroma. When you drink it right away, you will find that it has a strong umami flavor with almost no impurities. It is easy to drink, but the spiciness is a little bit bothersome, so if you want something a little spicy, it would be good to give it a try.

The last sake of the day is Nirugame. This sake has a target rice polishing ratio of 88%. It is as if Shinmasa's technology can make a delicious sake without polishing. When you drink it, you will find it to be a very strong sake. As expected, the sweetness is moderate. It has a spiciness and tastes like a mature carbonated drink. It has a fizzy and refreshing taste. It also retains the Shinsei feeling. It has less carbonation and sweetness than Amaerokeru, so it is more suited for a mealtime sake, but it can also be enjoyed with a glass of sake in the evening. Shinsei is still great.

I finally drank some Niimasa Yonotori. The regular one was enough, but a suspicious package came out from the back. According to the manager, it was a directly pumped Yonotori. The rice polishing ratio is 55%65% instead of 40%60%. The alcohol content is usually 15%, but 13% for the direct pumping. Now, let's compare them. Both are delicious. The Kisoushu is easy to drink. The naoikumi sake has a rich and rich taste, while the regular sake tastes a little lighter and fresher. Both have their good points, but the rarity makes me feel that the directly pumped one is better. Both have the same alcohol taste.

Kurei liked the challenge sake, but I think this dry type is originally popular. The alcohol seems harsh, but the aroma is good. I think it is easy to drink even if it is dry. It is not sweet, but has a sharpness that makes it suitable for a mid-meal drink. The potato salad with which it was paired was even better.
