2023年春頃から上司(自称日本酒マイスター)の影響で日本酒が好きになりました。色々飲み慣れましたが、基本は変わらず果実系でアルコール感のあまりしないタイプが好き。特定の味は相変わらず苦手みたいです。引き続き全国制覇目指します。 北海道在住。近い酒蔵は碧雲蔵まで車で20分。ちなみに上司の推し店は神奈川にある日本酒原価酒蔵さん。私も出張先でついて行きましたが素晴らしい。あの店北海道に欲しいですね。

Nemuro Dosukoi-san. The third item for drinking comparison. This is Hanzo's dry Junmai Kannoshu. The dryness is moderate. Compared to the previous Yamashimo, it is certainly dry, but the flow is similar. It is a little spicy with the sweetness of the rice as the main ingredient. If you want to drink it with salt-based food, this might be the place to go. It is easy to drink because there is no bitterness. Even those who don't like dry sake can enjoy this one. Compared to the first Echizenmisaki, it is not as strong.

The second variety of Nemuro Dosukoi. It is Yamashi-Arabashiri. It is refreshing and easy to drink, but the sweetness is a little strong. It has an image of Hazhu Honor or Hakutsuru Nishiki. The sweetness comes from the rice and is not fruity, but it is quite sweet. The alcohol content is moderate and easy to drink. It is also good that there is almost no bitterness or other unpleasant tastes. If you like rice-based sweetness, this is the one for you. Those who have a spicy taste may find it too sweet.

I came to Nemuro and Ichiro's main restaurant. I tried a bottle of Kitanokatsu Junmai Sake. It is a bit dry. It tastes more alcoholic than the freshly pressed one and is suitable for professionals. However, it is better than Shiboritate when paired with a side dish. The flavor increases as you drink it. It goes well with the crab cakes served with the entrée. The creaminess doubles in your mouth. Mayonnaise may be a good match.

I came to Nemuro, the easternmost point of Japan, to play. This time, I was traveling alone, so I thought I'd try a variety of places if there was a seat available (lol). First, I went to Ichiro, which definitely has sake. The limited edition sake "Shiboritate" from Kitanokatsu. It was tangy but easy to drink, with a sweetness of rice rather than fruity. It is easy to drink with a moderate alcohol content. It goes well with the entrée.

I went for another one, a Junmai Ginjo from AKABU. I had already had a ginjo from one of Iwate's representative breweries, but this was my first junmai ginjo. This sake is also fruity, crisp, and delicious. It is easy to understand why it is recommended for young people, as it certainly does not have a strong alcoholic taste. It can be served as a balanced sake, but it is also delicious on its own. I felt that it was a good choice for a mealtime drink. If there is an opportunity, it would be good to prepare it for evening drinking, but first, I would like to consider it as one of the missionaries to young people, lol.

The second party of the sake party. I had an appointment to meet my sake buddies after a long time at Shino's restaurant. The manager was at the sake party with us, so we decided to have a few drinks. We decided to have a few drinks. The sake recommended was "Ame-Afuri," a low-alcohol, easy-to-drink sake from Kanagawa Prefecture. All the regulars started with this one, so I jumped on the bandwagon. It was fruity, easy to drink, and had a nice restrained taste, just like Aizan. I drank it at the restaurant, but if I have the chance, I would like to drink it at home for dinner.

Sake Kai [25 years tokkuri x ogawa]. We drank a variety of local sake, but here is a representative. This is Kitanonishiki Hempei from the Kobayashi Sake Brewery in Kuriyama-cho. This sake is made from locally grown sake rice "Kitashizuku" and polished flat. It is a crisp sake with less sweetness and more of a clean taste. In my opinion, however, I would like to compare Hokkaido's sake with hot sake.

Sake Kai [25 years tokkuri x ogawa]. Intrigued by the label, I tried this one too. It is a limited edition sake made from Miyamanishiki grown by Kawaguchi Natto once a year. I was expecting something related to natto, but it did not taste like natto at all, but rather a good sake with a strong rice flavor. The sweetness is moderate, and the taste is also suitable for a mid-meal drink. The aroma is more subdued than that of Chokapu. I thought it would be even better if it were heated up.

日本酒会[25年とっくり×おがわ] 綿屋のちょいカプを飲みました。 カプロン酸エチルを使ったお酒でこの成分がフルーティーの香りとの事です。 確かに香りは甘い良い感じはしますが、飲んでみると割としっかりした味。食中酒向きの味わいです。ちょいって所がニュアンス通りなのでしょう。

Sake Kai [25 years tokkuri x ogawa]. Another bottle of this year's Imi. This one is much less sweet compared to the 80% polished rice (射美15), which is made with low-polished rice. However, it has a strong original flavor. If you want to pair it with a mid-meal sake, this is a good choice. 80% rice is a good technique to avoid any unpleasant taste. It is a taste that makes the food taste better.

I attended a local sake party [25 years Tokkuri x Ogawa]. It seems to be an annual event. We drank a lot and checked in. I'll skip the toast since I've had it before, but here it is first. I wondered what "15" meant, and was told it was a sake that should remind you of strawberries. The sweetness and umami are irresistible, yet not cloying or cloying. It is more easy to drink than strawberry, and this year, too, the Imi ran out early. I think it was probably the highlight of this year's event.

I opened a sweet version of Mansaku no Hana that I bought in Asahikawa. The Mansaku series has an image of well-balanced food sake, but this Gasshoi is said to be sweeter (Doi Shoten's pop). I tried it, and while it was tasty, I thought it was quite sweet. It is rated -10 on the alcohol level, but I personally feel it is sweeter than Kameizumi's Cell-25, perhaps because I have been cutting back on sweet foods lately. It is highly rated for its low level of bitterness and easy drinking, but I think the key point is whether or not it can handle the strong sweetness. For those who do not like sweet taste, it will be difficult to drink, but for those who do not like sweet taste, it is a product that you should try.

It has been a while since I drank sake. I had been holding back due to an inspection, but I am back to drinking moderately now that half of the limit has been lifted (lol). Here is the first sake. It is a limited-quantity Sentori Akatombo that I bought in Asahikawa. It is an autumn sake hiyaoroshi, so the sweetness is moderate and the acidity is low. It is not fizzy but fruity, so it is easy to drink and suitable for both evening and mid-meal drinks. The acidity is emphasized, but I don't feel it is too strong, and I think it is well balanced at a level that makes it easy to drink. It tastes better if you let it sit for a little longer than if you just open it.

I went to Chitose on a day trip. I was looking for a sake shop and found one that was opened in February this year. The manager was very friendly, and we decided on this one product: the Takai Sake Brewery's "Tatomo. It came with a box, which I didn't expect. I am very happy. I tried it right away. On the first day, it tasted more astringent than refreshing, and it was hard to describe the taste. The astringency I was worried about eased and it became easier to drink. Personally, I think it would be better if it had a little more yeast bubbles, but it is a delicious sake that is just right for drinking a little at night. It is rather sweet, but the description recommends it as a food sake. When I tried it with a stronger food item, the amount of alcohol, miscellaneous tastes, and astringency became a bit bothersome as I put more in my mouth at one time. I think it would be better with a lighter food item. The taste is fruity, but not fruity, and you can enjoy the sweetness of the rice. It is best drunk alone with a glass of wine at night. High-grade sake rice "Koshitanrei" is delicious.

This is a continuation of the local sake meeting [Hekiunkura version]. Here is another Honjozo Tokachi available for purchase. This sake is made at a local livestock breeding university. It is an easy-drinking, refreshing and aromatic sake, not to be underestimated as a university brewery. It has a flavor suited for a mealtime drink. The spiciness of the sake may be a little too much for evening drinking, but it was perfect with the food we served that day. The first brewing series, which has been kept in the brewery for five years, was very easy to drink as the pungency had been removed. The first pressing series was very easy to drink. The first pressing made a while ago was also very tasty, so I guess it depends on the sake. It was a valuable experience.

I attended a local sake event. Speaking of local, we enjoyed rare sake at Hekiunkura in Kamikawa Taisetsu. It was a great and luxurious time. Checking in with only what I was interested in what was available for purchase. Here's one you definitely can't miss. Tokachi with cheese. It is a delicious sake that was designed to accompany cheese. It is a refreshing sake, but the mellowness of the umami flavor is unmistakable and goes well with cheese. I think it is definitely better as a food sake than as a stand-alone drink. If you come to Tokachi, you should try this sake.

Here is the last sake I purchased the other day. It is a high-impact sake called "Kamikigen brewing No. 43 Honshin. As I tried it, it has a melon-like and kiwi-like aroma as described. It also has a sweetness that one can imagine the flesh of a melon, but for me, it also has a strong pungency. I first tried it with stew, but it wasn't good, but when I tried it with something sweet, the melon flavor was added, and it was a successful change.

Here is the second bottle at Obanzai Shino. My memory is a bit fuzzy at the end of the second meeting, but I drank the last bottle of Onogawa Tenka, a limited distribution product. It is a type with moderate sweetness and a sharp aftertaste. The sharpness is similar to that of Kido from Wakayama. This sake is also a perfect accompaniment to tofu. I enjoyed it.

I went to a restaurant in front of Obihiro Station called [Obanzai Shino], which is the place to go if you like Japanese sake. I told them my preference and what came out as a recommendation was Rokkasen's limited edition sake. This is a rare sake that is only available at Rokkasen's March event, and I had a somewhat precious image of it. It has a fruity aroma and a taste that is unique to Yuki-Megami (Snow Goddess), but the alcohol content is a little high at 16%. It is a good sake to be enjoyed with a side dish rather than on its own. There seems to be an event at least once a month, and I will participate in the event hosted by the restaurant later this month.
