2023年春頃から上司(自称日本酒マイスター)の影響で日本酒が好きになりました。フルーティ系で甘いやつが好きです。 後味が苦味や辛みでスッキリしてるタイプも大丈夫。終始辛いのは苦手なのでしっかり見極め、のんびり全国制覇目指します。 北海道在住。上司の推し店は日本酒原価酒蔵さんです。私も出張先でついて行きましたが素晴らしい。あの店北海道に欲しいなぁ。

I checked in two together, although they are from different breweries. This was my first time drinking Dateseven, but this time the stars of the show were Katsuyama and Sumisuirie, a pair of Orihime and Hikoboshi label types, so I tried them both. Orihime was easier to drink for me, but both were spicy and sharp, and I felt they were suitable for a mid-meal drink. I think it is a good sake with more umami than sweetness. I think Dateseven makes a different one every time, so I would like to drink next year's if I have a chance.

旭川の隣町東川で生産した彗星を佐賀県の東鶴酒造で製造した小川商店のブランド酒。青木さんと尾上さんが作ったのでこの銘柄。飲んでみるとコチラも甘さ控えめの旨み重視で食中酒向きの味。飲みやすいけど晩酌向きではないかなぁ、しかし居酒屋でこう言うスッキリ系飲んでしまうと飯が進みます。

I went to a local liquor store and found a new rice from Toyo Bijin, so I bought it. I drank it with high expectations, as Hazhu Honor is the same rice used for Jyushiyo. I knew Toyo Bijin would be like this. It has a fresh feel on the palate. From the very first shot, I was filled with joy. After that, the sweetness circulated moderately, and the taste, which at first I thought was fruity, was established with a rice-like flavor. The spiciness and miscellaneous tastes appear when you drink it with different ingredients, and they suppress the sweetness perfectly. It is a good sake. Toyo Bijin is delicious after all. I can't wait to enjoy it with various rice substitutes. I enjoyed it tonight with smoked scallops. Thank you very much.

Finally, I got the sake Niimasa that I had longed for. The regular price is reasonable, but at an auction it costs more than three times as much, but I didn't miss my chance to buy it (I'm impressed. The animal series is limited to one bottle per person, and I chose the flax cat. When I opened it, I was immediately enveloped by a sweet aroma like baked sweets. When I drank it while being thankful that I was able to open it at home, the image I had was of a soft and fluffy texture. Even though it is sparkling, the fermentation effect makes it easy to drink without being harsh, and I was intoxicated by the feeling of eating a dessert. It was almost the first sake that did not feel like fruit, and I had a strong impression that I had never had anything like this before.

My boss got a bottle of Hououmida Hiyayogoshi, and he shared some with me (with a bottle). The more I drink Hououmida, the sweeter it becomes. It is easy to drink because it is made from Yamada Nishiki. It is consistently delicious.

I drank Tomigiku Shuzo's No. 77 yeast, which I purchased on a recent trip to Kitami. It is easy to drink because of its low alcohol content. It is like a bitter lemon, if I may use an analogy. It is not very sweet, but not bad. Junmai Ginjo is also easy to drink - it has a strong acidity, but I don't mind it so much. It also has a pungent taste, but it is similar to the flavor of lemon, so it is well balanced. Personally, I felt it could be a little sweeter, but it is a very good food sake, so I guess it depends on the situation.

Here is another Zanso Hourai from Kanagawa Prefecture that I bought with Machida Shuzo. It has a strong apple taste. It was an easy-to-drink sake with a fizzy and slightly carbonated taste, with just the right amount of acidity and sweetness. I was thinking about whether it tasted like apples when I drank it, and it went down very well. The production date was half a year ago, but the acidity was not as harsh as I expected, so I thought it depends on the variety of sake. I expect it to change after the bottle is opened. In any case, I am reflecting a little on the fact that I should pay close attention to the manufacturing date.

Machida Shuzo's Gohyakumangoku special junmai found in a remote area of Kushiro. The owner told me about the various Machida Sake breweries and I decided to try this one. When I tried it, it was just like a white wine. It is the kind of sake that makes you want to eat meat dishes. It is quite a tasty sake...but... It was good at first, but as I drank it, I thought the acidity was a little strong. I looked at the back of the bottle and found that the production date was six months ago. I thought that since it was a draft sake, it would be ready to drink in about three months. Since I opened the sealed bottle, I hope it will settle down after some time, but I will be careful next time.

My boss, who went to Miyagi Prefecture for a visit, brought me a souvenir that was, by no means, sake. I am happy to drink a little sake for the first time. I was very impressed with the local sake brewery, which I had never drunk before. It is a daiginjo, but with 40% polished rice. The store staff said it was sweet, but when I drank it, I found it to be quite spicy. The sweetness comes later, but it is moderate. The rice polishing ratio is good, so it is easy to drink even though it is spicy. It seems to be good to drink with food, so we drank one with octopus zangi, which we prepared as a snack. Uma~!

I ordered Okunomi with Hanayuki. This one is sweet but has a bitter image, and I thought it had a strong flavor, but it was a slightly dry genre. I drank it with Hanayuki because it is sweet, but the synergistic effect was delicious. It goes better with food.
