I went to Kakugami Gyorui the other day and bought some sweet salmon. It's salmon for salmon. If it goes well with rice, it goes well with sake. Since fish is a snack, it should be spicy. This is the first Amabuki. This brewery brews all of its sake with flower yeast. We will have some autumn sake. The yeast used is Abelia. The words of the flower are "strong luck", "humility" and "modesty". It's perfect for me, who doesn't have a shred of humility. Opening the bottle. It smells like a flower. Maybe it's just my imagination. I can feel the gorgeousness. Ripe pineapple. The aroma of the pineapple when you bite into the pulp spreads to your nostrils. It's thick and delicious. After letting it sit for a day, the aroma became more subdued and a little drier and spicier. This is not so bad. I think I got lucky. It's like I got a 5 star in a gacha. I'll buy a horse ticket.

Nanbu Bijin. Sake Mirai. I asked the liquor store and they said it was much better than last year. I didn't know about last year, but if this sake shop says so. I was also attracted to Sake Mirai. When I thought of Nanbu Bijin, I had the image of a rugged label, but this label has a great message. We opened the bottle. It has a beautiful and gentle sweetness. It has a lot of umami. It's good with a meal. Depending on what you eat, some parts become less noticeable, while others fill in the missing parts. It goes well with both sashimi and Western food. This thing is so close to you. He's a lovely guy. If you drink it while eating rice, it's instantaneous. It's easy to understand why sake brewers rave about it.

Kouei Chrysanthemum. 幾望 means the night before the full moon. It should have been opened on 10/19. I had decided to chase it for a year, but I missed some things. It's really difficult to chase for one year, considering funds, enthusiasm, liver, capacity of refrigerator, etc. The day I opened it was the Kikka-sho. The winner was the title holder. Father Duramante Mother Mave Mother Motivater I had left it out of my prediction, asserting that I didn't need a drop of King Kamehameha blood in Kikka-sho. I can't believe a child of Duramente won the Chrysanthemum. It was a common ticket that I didn't buy just the first place. I wonder if it was the blood of Montjeu in his mother's lineage that kept the distance. Douramante has passed away, and I hope that some of his remaining horses will inherit his blood. Before the fourth corner in Nakayama. I want to see that leg that played in front of my eyes again. The taste of the sake is naturally good. It has the taste of sake that has been brewed over a summer. It has a strong impact of sweetness, the usual acidity, and a slight milkiness. It is said to be at its best after two weeks, but I wonder if it will still be there.

Yukinokaya is a sake that my father taught me. I thought it was delicious the first time I drank it, but the second time was more impressive. When I went to Akita for work, I asked for a bottle of Yukino Kayasha at the izakaya I went into. It didn't have any specifications written on it, so I was careless, but what came out was Yamahai, which I'm not very good at. At the time, I was not a fan of the peculiarities common to Yamahai. Oh, wow. I've done it. I had no choice but to order it, so I took a sip, and it was shockingly delicious. Is this really Yamahai? Since then, I've been a fan of Yamahai when it comes to Yuki no Kayasha. So this time, too, it's Yamahai. It's getting deep into autumn, so we're going to have a hiyaoroshi. Open the bottle. A gentle aroma. The peculiarity of Yamahai is very slight. There are no outstanding taste elements, so while there is a bit of a flatness to it, it has a beautiful flavor typical of Yukino Kayasha. It also has the umami of a hiyaoroshi. It is as delicious as ever.

A friend gave me this drink. This sake was giving off a bad vibe from the time it arrived. After all, it calls itself dangerous. Opening the bottle... it took over 15 minutes. The bubbles were egregious. The lees are also wonderfully involved. Surprisingly sweet. I wonder if it comes from the lees. After that, it's sizzling. Pungent taste. Bitterness. Strong alcohol feeling. Noisy laugh in the mouth. High aggression. There is also a sense of refreshment. Similar to Hanaboe's Splash which I drank sometime ago. The next day, it's all quiet. The carbonation is gone. I wonder what the difference is between a sake that loses its gassiness and one that is still going strong the next day and beyond.

On Sake Day. A call from a junior colleague who changed jobs. He said he was at the Hasegawa Sake Shop in Tokyo Station. He wants me to choose a sake to bring to his friend who lives in Tohoku and likes clean and refreshing sake. I don't know the lineup. Just bring Tenbi, it's good. You can't go wrong. I saved the Flax Cat Sparkling for a special occasion. Sake Day is a special day for sake drinkers, and it's a good day. Opening the bottle...was a challenge. The bubbles are strong. Juwa juwa juwa juwa. It is more energetic than before. Acidity from the white koji. Beautiful sweetness. Milky mellowness. It doesn't taste bland. It smells a little like wood. It is very delicious. I can share it with my wife. It would have been a good pairing even if I had prepared some fine fruit to make it more attractive. As it turned out, Tenbi was a big hit. He gave me a nice tasting comment about the slightly carbonated grape juice. Good, good, good.

I reconfirmed the familiar brand. I bought it together with Miya Kanbai which I drank the other day. It was my first time to try the classic Kame-no-o. The Omachi was very good, so I had high expectations. Open the bottle. It's a little mild. I thought the lactic acidity would be more intense. When you put it in your mouth, you can taste the sourness that is typical of Senkou. But after that, the flavor and aroma don't chase you too much. It is gentle from beginning to end. It sounds good to say that it is well-balanced. Is it because it is Kame-no-o? Is it still a little hard? It's a bit of a letdown from what I expected from Omachi, but I'm hoping it will change after a little time, and I'll have another glass tomorrow.

Drinking at my parents' house. My parents are also sake drinkers, but because of their location, they can't always buy new and rare brands. Every time I go home, I buy sake that I can't seem to find in my hometown. They probably don't know about "Shufuda" sake. "Kamoshiki? I drank it the other day." Oops. Really? If you listen carefully, it seems that Kamonishiki was featured in a sake documentary on WOWOW. But they couldn't get hold of any kafuda-shu, so they drank the main brand of Kamonishiki. That's rather amazing. I've never had that one. Open the bottle. It has a gorgeous aroma. It's a legitimate Junmai Daiginjo. There is a slight sizzle. It cuts through the sweet gorgeous taste and aroma quickly. It is easy to drink. It goes down easy. Ummmmmmmmmmmm. It's been a while since I drank it, but I reconfirmed its high level. It's also a great cospa.

My turn to scavenge for trendy sake is over, so it's been a while since I've had a familiar sake. It's been a really long time since I had anything other than Miya Kanbai's seasonal sake. Opening the bottle. It has a soft scent of flowers. The label says it's a sake that brings spring to your heart, and it certainly does. It's been getting more autumnal lately, but it feels like spring at once. It has a soft sweetness, and a beautiful taste without any miscellaneous flavors that are typical of Junmai Daiginjo. And it has a sweet and round aroma. To be honest, this sake is impeccable in my opinion. I am satisfied to be able to reconfirm the quality of my favorite.

The last to fish for trendy sake. This is the third bottle we ordered from Saito Sake Store. Jyosu mori. kamosu mori I've always thought it was better to have a lot of 3-stage brewing or 4-stage brewing, but what does 1-stage brewing mean? When I look at the homepage of the brewery, it seems to mean that it is a one-shot game to determine the taste. I opened the bottle. It says "be careful not to spill", but I didn't have any trouble. The aroma is sweet and fruity. I didn't feel much gas. The first impression, or almost all of the impression, is sweetness. The sweetness is amazing. It's just plain sweet. It is beautiful. It's not hard to drink at all. It's just so sweet that your mouth feels a little flabby after drinking it. It's like a dessert wine. I don't think it's necessary to have an appetizer. It was my first time to try nihonshu. I think it's good to recommend it to people who hate sake.

Fishing for trendy sake. This is the second bottle ordered from Saito Sake Store. Garakudai. I was surprised to hear that it's a surname on Sado Island. I'm sure you can't read it. The brewer became interested in sake while studying abroad in Switzerland during his university days, and acquired management rights at the age of 24. I read the interview article and the amount of enthusiasm is amazing. Sake made by someone younger than himself? I opened the bottle. There is no sense of gas. The aroma is also mild. When you put it in your mouth, it is also gentle. The sweetness, acidity, and alcohol are all gentle. It's not a classic sake at all, it's a modern style, but it's not flashy at all. I think it is better to drink it with a sake cup or a flat sake cup than a wine glass. It is very delicious. The sake itself is very gentle, but the brewer's passion is amazing. If I were single, I might have become a brewer because of this passion.

(1) Hasegawa Sake Store Gransta→Rai Tokyo Station Store (2) Mimasu sake store -> Honda Higashi Jujo store (3) Kakinuma Sake Store → Fujimaru Nishiarai Daishi Store I went to ① with three choices. After the first inoculation in the morning, I went to Tokyo Station. It was hard to eat emulsified Jiro in the morning... I managed to finish my meal and went to the Hasegawa Sake Shop with a huge sense of fullness. The only thing I wanted was Tenbi. I'm glad I found it. For some reason, I didn't have any adverse reactions at all. I had prepared a lot, but I was disappointed. It's no use, let's drink. Open the bottle. There is a sense of gas. It is easy to drink and dry. The quality of the sake is clean. The sweetness doesn't come out all that much. It's okay. It's not exactly gorgeous, but it's really nice. It's like a beautiful young woman who looks good in kimono. On the second day, there was a little sourness. It's also delicious. The trendy sake is also delicious.

I bought all the newcomer brands I wanted to drink at once. It's been a long time since I've ordered online from Saito Shuten. They didn't have the Sairei near me, so it was a big help. I opened the bottle. There is no gas. When you put it in your mouth, it's smooth and soft, and there's nothing to catch. It's smooth and non-stressful. The sweetness and umami are there, the acidity is there, and it's not that it doesn't have an alcoholic feel to it, but none of it is sharp and balanced, and it seems to be trying to talk to me in my mouth to get along. I have the impression that it is a sake with the stimulating characteristics of sake such as bubbles, noticeable acidity and bitterness reduced. It's so good that I keep drinking it sluggishly.

I've been seeing this sake on Twitter since last year, with hashtags like #10 sake of the year. I've been noticing it for a while, but I've never been able to get my hands on it. When I went to stock up the other day, I couldn't find any sake that fit the bill. So...it's finally your turn. And I bought it. It's been a long time since I've bought sake with a decorative box. Opening the bottle. The first impression is a dry sweetness. The dryness is emphasized with a slight chili taste. It has a mild acidity, as it was awarded the "Sake I want to drink with a wine glass award". It has a mild sourness, and the flavor shifts to the umami when you think it is going to end. It has a good aftertaste and is very satisfying. It is indeed delicious. I'm convinced that I want to drink it in a wine glass. My impression of Kanagawa sake has changed a lot.
