It has a firm sweetness, a little astringency, bitterness and umami. It has an aromatic botanical aroma. I think there is a better way to describe it... It was not greenish, but had a rustic, herbaceous aroma.

The sweetness and acidity are moderate, and the good parts of sake start to come out in the middle of the bottle. This one I visited the same store 3 days in a row so I was able to observe the 3 day progress 🙌🏻. Freshly opened 1st day Mild carbonation and overwhelming rice flavor. There might have been a little bit. The gasiness makes it hard to feel, but there is a faintly sweet and fruity taste, with a really strong umami and a slight bitterness in the aftertaste.

It is very easy to drink, with a strong sweetness up front and almost no acidity. I felt a hint of bitterness. I thought it was interesting that the standing aroma, which had a strong sense of rice, turned after a while into an aroma filled with blue moisture, like the smell of grass.

Fruity! Sake with a fresh acidity and a firm bitter taste, with mild sweetness and astringency. It also has umami. The aftertaste has an alcoholic feeling, similar to that of Masumi.

I don't have to tell you that it's delicious, I like its strong and clear taste.... I think the astringency comes out when it becomes lukewarm, and it becomes well-balanced. I really like the standing aroma.

The ginjo aroma is wonderful... The aftertaste is well-balanced with acidity and astringency, so it was delicious with meat. I like the taste of Yamagata Masamune itself, so I don't mind if it's not Aizan. The chicken fillet served in the course? It was very good when I paired it with the meat which had a strong flavor and juicy fat. It was a great pairing because it didn't make me feel the weak umami of the Aizan itself, and the astringent aftertaste made the fat refreshing to eat.

The aroma is clean and fruity, and sweeter than the other three we drank that day. It tastes like a Hoshisen with a strong bitterness. It has a good nose, sweetness and bitterness, and the bitterness spreads to the end, so it goes well with soy sauce dishes and meat. I think it would be good with bitter chocolate with low acidity.

Softly sweet, full of flavor, yet fresh and delicious like fruit, you can drink it indefinitely...! It has an aftertaste of white grapes used for wine. I also loved the Hoshisen No. 8 I had before, so I will forever recommend Maruichi Sake Brewery...

I thought it tasted good cold, but even a little looser. It has a weak old sake-like aroma on the palate, with sweet overtones of chocolate and caramel. It is a refreshing sake with little umami. I like sweet sake, so when I had it with soaked yams in soy sauce, the sweetness was enhanced and it was very nice!

Maruishi Junmai Hi-ire A well-balanced sake that is easy to drink and has both sweetness, fair acidity, and richness. It is less sweet than Maruishi's Junmai Ginjo and has a more robust flavor, but if you like sweet sake, you will enjoy this a lot on its own.

This sake is made from "bolt from the blue" edible rice. It had a refreshing aftertaste without the persistence that I felt when I ate it as rice. It has a slight astringency, followed by a moderate bitterness and a strong acidity, so I think it can be drunk in a way similar to wine.

I smell soy sauce! It's a strong sake! The moment you feel the momentary sweetness, it hits you with a batch of umami, richness, and a hint of bitterness! Very strong... but the aftertaste disappears without a trace, and the aftertaste doesn't interfere with the meal! Perhaps the closest thing to it in taste is daikon leaves... a mystery! But it's delicious!

It has a strong, full flavor with acidity, and a round taste with a hint of bitterness and astringency. I like it because it has a flavor similar to that of Hoshisen No. 8 unfiltered unpasteurized sake, with less acidity and 70% bitter chocolate. The aftertaste does not drag so much.
