Here is the last drink at HARETOKE. I asked for a refreshing sake to finish off the meal. The sake was just as I had hoped for, refreshing and clean. I was so drunk and it had been so long that I forgot the details of the taste, but I still remember how refreshing and delicious it was.

When we asked for a clear, dry sake at HARETOKE, this is what we were served. Perhaps it was because the previous Nadagiku was so strong, but I did not feel the dryness, and the taste was refreshing and went well with the horse sashimi.

The aroma is clean and fruity, and sweeter than the other three we drank that day. It tastes like a Hoshisen with a strong bitterness. It has a good nose, sweetness and bitterness, and the bitterness spreads to the end, so it goes well with soy sauce dishes and meat. I think it would be good with bitter chocolate with low acidity.

I thought it tasted good cold, but even a little looser. It has a weak old sake-like aroma on the palate, with sweet overtones of chocolate and caramel. It is a refreshing sake with little umami. I like sweet sake, so when I had it with soaked yams in soy sauce, the sweetness was enhanced and it was very nice!
