I smell soy sauce!
It's a strong sake! The moment you feel the momentary sweetness, it hits you with a batch of umami, richness, and a hint of bitterness! Very strong... but the aftertaste disappears without a trace, and the aftertaste doesn't interfere with the meal!
Perhaps the closest thing to it in taste is daikon leaves... a mystery!
But it's delicious!
