Junmai Special Sake with 55% Rice Polishing Rate Murata-cho, Shibata-gun, Miyagi Prefecture, where the brewery is located, is lined with merchant houses made of earthen storehouses and has a long history of prosperity as a distribution center for safflower and other crops under the direct control of the Date family during the feudal era. Located at the foot of Mt. Zao and blessed with rich nature, the family's founder Saemon Juro took the name Onuma-ya and started brewing sake in Shotoku 2. Since then, they have been brewing high quality sake by hand, starting from the koji making process, and using the traditional cold brewing techniques. This HEAVEN & EARTH has the same specifications as the standard Ken-Kun-Ichi "Tokubetsu Junmai Dry", but it is designed to be a sweet fruity sake for women and young people. When poured into a glass, it has a modest sweet ginjo aroma. My first impression when I drank it was that it had a sweetness like that of a grape or apple. I think it is one of the strongest sweetnesses I have ever tasted. I wonder if this is also a characteristic of the rare sake brewed with 100% Sasanishiki... It's delicious! Ishibe, Konan City, Shiga Prefecture, where the brewery is located, was the first post town on the Tokaido Highway from Kyoto during the Edo period (1603-1868), and it has a combination of conditions suitable for sake brewing, such as the cold wind called "Hiei Oroshi" and subsoil water from the Suzuka Mountains. Sake with an undisclosed rice polishing ratio. It's probably a Junmai Daiginjo. When I looked it up, I found out that it is a special limited edition sake that was brewed using "Hitogochi" rice from Nagano Prefecture before the main brewing process. When I poured it into a glass, the aroma was a mild ginjo scent, but the ori spread out like haze, and the way the light shone through it was just like "hikarizas in haze. When I drank it, my first impression was that the sweetness, umami, and acidity unique to the ori were a perfect match. It has a very elegant taste. Junmai Ginjo sake with a rice polishing ratio of 50%. If you look it up, you'll find that the name of this sake, "Yasuke", refers to sushi in the Hanayagikai. Its roots go back to the Joruri and Kabuki play "Yoshitsune Senbon Zakura". Taira no Koremori, the grandson of defeated general Taira no Kiyomori, escaped from the battle of Minamoto and Heike and fled to a sushi restaurant. His pseudonym "Yasuke" later became the origin of the word "Yasuke" for sushi in the willow world. Therefore, the concept of Hidakami Yasuke is "Good match with seafood" and "If you do it with fish, it's Hidakami! If you're going to do it with fish, do it with Hidakami! When poured into a glass, it has a slight yogurt-like aroma that is typical of Tsuchida. The first sensation when you drink it is that it is a clear, crisp, dry sake. After that, a slight yogurt taste lingers in the aftertaste, just like the aroma. It's certainly a clear, crisp sake overall~.
