Junmai Ginjo-shu with a 50% rice polishing ratio! I found out that it is a limited edition sake from 寫樂, which is only sold for three months during the winter season. It is brewed with 50% polished rice from Gohyakumangoku rice grown in the prefecture and made into an orikara. When poured into a glass, it has a gorgeous aroma reminiscent of La France and melon. The first impression after drinking is that it has a fresh and rich flavor unique to freshly pressed sake, while the acidity in the aftertaste is crisp and well-balanced. It is also delicious! Junmai Ginjo-Ginjo-Hara Sake with a 60% rice polishing ratio According to research, Yukitsubaki Sake Brewery was founded in 1806 and has a history of over 200 years. The company's brand name is "Yukitsubaki," which is the prefectural tree of Niigata Prefecture and the city flower of Kamo City, Niigata Prefecture, and it is a "junmai kurazou" (pure rice brewery) that makes only junmai ginjo and junmai sake by hand without using more machinery than necessary. The rice used is 100% Niigata-grown Koshitanrei, and the junmai-ginjo sake is cold brewed during the winter and slowly matured at low temperatures until autumn. The rice used for this sake is of course Yamadanishiki from Hyogo Prefecture. This sake is brewed using rice that is inseparable from Toji Matsumoto. When poured into a glass, it has a mild but sweet aroma like a pear. The first sensation of drinking this sake is a tingling, gassy feeling...but the light mouthfeel and pleasant fruity aroma are pleasant. The aftertaste is quite fine, with acidity, sweetness, and bitterness simultaneously complementing each other pleasantly in the mouth. This sake is also delicious.
