Clear pink with orange hues. The aroma is lactic acidity typical of aged goat cheese. Also, there are berries such as strawberries. In the mouth, a sweet and sour taste comes immediately. It's not sweet and sour at all. It has a lively raspberry-like sourness and sweetness, but it's also fresh and well balanced.

Clear ivory hue. The nose is rightly reminiscent of French salted caramel (caramel salée). There's also a hint of white chocolate on the nose. In the mouth, the acidity is surprisingly effective! The cocoa-like astringency also comes afterwards. It's not that sweet for a noble brew. It's too balanced and dangerous to go on guzzling. This doesn't need any particular snack. If I had to say, I think it would go well with a cake or crepe from Brittany that has a little bit of sweetness with salted butter.

Slightly yellow in color, with a slight sense of maturity. The aroma is gentle, with hints of melon and rice. Very soft and delicate on the palate. Only because it is made with very soft water...what a softness! It is not too fruity and has a good balance of flavor and acidity. This is one of the most popular sake from Hiroshima. I would recommend it to anyone, regardless of their taste. The water is clean and soft, and the rice for the sake is Yamada Nishiki from the Special A district... I'm sure you'll agree that it tastes elegant! When warmed up, the sourness is more pronounced, but it is delicious without any bitterness.

This may be the first time I've had Kinmon Nishiki. It's a mellow, mellow junmai sake with a grainy feel to it, given the 80% rice polishing ratio and Yamahai specification. The aroma and flavor of ripe bananas is also clear. The balance between the fruitiness and acidity in the heavy mouthfeel makes it surprisingly easy to drink cold. Warming it up enhances the flavor and brings out the roundness. I think room temperature or lukewarm is just right.

Dewa Sanshu is my favorite sake. I imagine it goes on without food. The aroma is cool and refreshing, and it has a watermelon-like aroma. In the mouth, it is fresh and juicy. The flavors are well balanced with just the right amount of sweetness and mint-like freshness. The finish is elegantly bittersweet. After some time, it takes off the corners and becomes more mellow and easy to drink. It becomes more fruity and some of the bitterness is eliminated.

This is the driest of the Tatsunogawa breweries. It is chunky with Dewa-Sanshu polished to 50%. Smell it and you will find a slight ginjo aroma. The mouth is clear, with a clear freshness. There is no sweetness at all, but you can sense a gentle touch that is typical of Tatsunogawa. The crispness is very good, inviting the next drink.

The color is pale gold. It's a beautiful piece of mountain waste that has been polished to 80% of the Ishikawa Gate. Is it "pretty" according to the brewer? Elegantly scented with grain. In the mouth, the flavor is mild and firm. Fruitiness reminds me of pears and persimmons. The taste is clean and refreshing, with no hint of the 80% rice polishing ratio. The alcohol content is 14%, even though it is an unprocessed sake. It has a richness and is easy to drink.
