Slightly yellow in color, with a slight sense of maturity. The aroma is gentle, with hints of melon and rice. Very soft and delicate on the palate. Only because it is made with very soft water...what a softness! It is not too fruity and has a good balance of flavor and acidity. This is one of the most popular sake from Hiroshima. I would recommend it to anyone, regardless of their taste. The water is clean and soft, and the rice for the sake is Yamada Nishiki from the Special A district... I'm sure you'll agree that it tastes elegant! When warmed up, the sourness is more pronounced, but it is delicious without any bitterness.
We use a rare reprinted rice called "Shinryoku".
Just like its name, it's powerful! You'll have to warm this up...
With 85% rice polishing ratio and 19% alcohol content, it has a great depth of flavor and a strong sourness that is typical of the sake brewing industry. It has a smoky feel to it, and you can enjoy it while eating the delicacy little by little. It seems to be good on the rocks, so we want to try it next time.
Cold: Slightly yellowish in appearance. The aroma is almost non-existent. It has a moderately mature mouthfeel. Umami-type food juggernaut. Mildly tasty hiyaoroshi, which goes well with pork pancake and okonomiyaki. It has an umami and salty aftertaste.
Warmed: The flavor condenses further as it warms up. This is a great match for mushroom-based dishes.
