We use a rare reprinted rice called "Shinryoku".
Just like its name, it's powerful! You'll have to warm this up...
With 85% rice polishing ratio and 19% alcohol content, it has a great depth of flavor and a strong sourness that is typical of the sake brewing industry. It has a smoky feel to it, and you can enjoy it while eating the delicacy little by little. It seems to be good on the rocks, so we want to try it next time.
