This is delicious.
This special junmai sake is made from 100% Gohyakumangoku rice grown in Kyoto Prefecture. It is freshly squeezed and bottled as it is.
Yamakoshi Junmai Ginjo (limited edition red label) is dry but tastes good chilled. It is fruity on the palate, but later on, it is very light and dry. The aroma is also nice.
I heard "chicara" is Italian for cicada.
I wonder if this is the last of the summer liquors lol. It seems to be a patented yeast with high malic acid production. It really has a fruity apple aroma, and I drank it chilled. It was one word, "umai" (delicious). I also read that it has a gentle "sweetness" at room temperature, but it is good chilled.

The flavor is reminiscent of white wine, and the sweetness and refreshing sweet-sourness are very refreshing and easy to drink.
The mouthfeel is pleasant and dry, with a fruity aroma. It has a fresh feeling and is really easy to drink. I guess it tastes gentle with a touch of sweetness.
