TMORI
Sake of unknown standard from the raw material rice. This year's sake seemed to be like a Japanese pear. If I recall from my notes, last year's sake had a more robust sweetness. This year's sake also had sweetness, but it was well-balanced with a good aftertaste.

The image of the acidity extension is more robust than that of the regular lineup of Haneya. Haneya is also hard to find since there was a story about Shimura Ken-san's favorite drink...

It is said to be a blend of junmai daiginjo with junmai ginjo sake. Overall mild umami and sweetness. The sweetness lingers quite a bit later in the flavor.

Unlike our usual sake, it has a clean, gentle sweetness, not all-out umami, a slightly firm taste, and a dry aftertaste, more like a Niigata sake.

A sake that can definitely be heated up. The nigori flavor and sweetness is really delicious!

This is a special honjozo that you don't see very often. It has a strong flavor with a high alcohol content.

It seems to be brewed with rice and water within 5 km from the brewery. Is this a form of terroir similar to the current trend? The taste is clean, sweet, and refreshing, perhaps because the label on the back of the brewery is intended to make junodai more accessible to the public.

The image of the toji at the time of brewing is music CANON Usually Hiokizakura has an outstanding pattern of heating and cooling from overwhelmingly warming, but it is balanced at room temperature itself. Quite the opposite image. It seems to be a one-time-only sake, but what a waste. I wish they would release it every other year!
