I went to a liquor store near Niigata Station and asked the clerk, "Do you have any Yamama?" The clerk replied cheerfully, "We are out of Yamama, but we have Koshinoshiratori now. What is it? Koshino Jakucho...?" The clerk explained that the sake is made in the same tanks as Yamama, and that the middle sake is Yamama, while the aggressive and rough-run sake is Koshino-Shiratori. Well, I didn't know such a sake existed.... It is really amazing. I immediately had it in a wine glass, and the sweetness, umami, aroma, and gasiness were to my liking....................

I was strolling around Fukushima-related stores to buy a gift for Mother's Day and to commemorate the end of Golden Work! I found this handy cup of sake 👍. When I opened the bottle, it had a clean sweet aroma of sugar cane. The mouthfeel is smooth with a round sweetness that sinks in. The mild umami has a banana-like flavor. The pungent spiciness comes from the clear taste. It has an astringent aftertaste that comes around the time of swallowing and an easy-drinking quality that disappears without a hitch, giving it a clean, calm taste without heaviness or clinginess! It is a beautiful and calm taste with no heaviness or clinginess! Don't underestimate it as a cup of sake...! This pleasant cup of Aizu Sake was so easy to drink that it made me feel again the power of Aizu Sake 😋.

I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!

A 1-goupe bottle that I had gotten at Yamada-san, a sake dealer in Ikebukuro Seibu. I check the small refrigerator near the cash register, which is mainly small bottles, every time I go there. It is Kamerei Mannen from Hiroshima🐢. The classical texture gives it a ginjo-shu feel.
