I went to a liquor store near Niigata Station and asked the clerk, "Do you have any Yamama?" The clerk replied cheerfully, "We are out of Yamama, but we have Koshinoshiratori now. What is it? Koshino Jakucho...?"
The clerk explained that the sake is made in the same tanks as Yamama, and that the middle sake is Yamama, while the aggressive and rough-run sake is Koshino-Shiratori. Well, I didn't know such a sake existed.... It is really amazing.
