There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

I went to a liquor store near Niigata Station and asked the clerk, "Do you have any Yamama?" The clerk replied cheerfully, "We are out of Yamama, but we have Koshinoshiratori now. What is it? I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!

Rice used is Yamadanishiki After opening the bottle, I wondered if it would have been better if I had let it sit longer. I regret it after opening the bottle. A 1-goupe bottle that I had gotten at Yamada-san, a sake dealer in Ikebukuro Seibu. I check the small refrigerator near the cash register, which is mainly small bottles, every time I go there. It is Kamerei Mannen from Hiroshima🐢. The classical texture gives it a ginjo-shu feel.

A souvenir of Hiroshima from a friend. It seems to be read as "Maneki". I had an image that it made dry sake, but it was more modern and I drank it quickly. A restaurant near my office specializing in Yamagata ramen started serving cold ramen for lunch, so I went in. The soup and noodles were delicious, though a bit salty, but the coldness of the soup and noodles did not defeat the taste. The third picture is the counter of the restaurant. It is a sight for sore eyes from noon.
