Natsuta Fuyuzo works in the rice paddies in summer and in the warehouse in winter. This is my first time to try the KAME-NO-IO sake rice. ๐ It was very elegant, with a deep and delicate flavor. Plus, the mouthfeel is crisp and refreshing at the end of the drink ๐ I paired it with grilled fish and it goes well๐. It's a lost one in my book ๐

It is a light nigori 26BY of Iwo ๐ถ. First, cold sake. The top aroma is that of old chests ๐. In the mouth it has a hint of sweetness, but the aroma of old chests is strong๐ . Next, warmed sake ๐ถ. When warmed, it smells like wet wood ๐. In the mouth it tastes a little acidic and the taste wasn't bad. Like the Chiyomusubi I had two drinks ago, nigori-style sake is said to be unsuitable for aging because the nigori part of the sake is altered and causes off-flavors. The restaurant does not seem to be a sake store, but the lineup always draws me in. This time, I ordered "SENKOURI" and this was the sake I ordered. Fresh! But almost no acidity. Visiting Ise with my wife's parents! (We just went there last October ๐ ) Geku shrine โ Sarutahiko shrine โ lunch at Ise Kaku Uchingu restaurant โ around the inner shrine and back to the inn for my parents and to Ise Man for myself and my wife ๐. This time, due to the space in our fridge (and budget), we only tasted the raw sake! It was refreshing and delicious ๐๐๐.

Kami no Ho, is the name of sake rice. It is made in Mie Prefecture and seems to be rather limited to the region. The taste was milder than that of nama-shu, but full-flavored. It was a delicious sake.

Shimane Local Sake Fair Osaka โข. Ichinomiya Sake Brewery of Iwami Ginzan and Rika. I had bought Yukika at Hanshin Department Store in Amagasaki in the past. I found out that it was Mr. Rika, the toji (master brewer), who was standing in the store at that time๐ . I tasted the following Iwami Ginzan Special Junmai Hiyoshi Oroshi Rika Junmai Ginjo Kaihatanryu Ichitunya TANE Nama-zake Yukika Sparkling None of them left much of an impression on me, but I thought the Yukika was as tasty as ever. It was sweet and strong, like a strong calpis soda. I would like to try it again because Sugidama-san in Kyoto sells Iwami Ginzan.

This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens ๐. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.

I saw it on a liquor store's installment and was completely unfamiliar with the brand, so I searched for it on Sake no Wa and found that Greissinger19 was drinking it, so I bought it. Strong gasiness. Dry, clean and sweet. Cider-like with peach and lychee flavors. Lightly sweet as written. The acidity is beautiful and the bitterness at the end is pleasant. A better sake than expected.

@sakebar Fukuzo Osato Sake Brewery is located in Kama City, Fukuoka Prefecture. I didn't know about this place until I came to Fukuzo. I checked and there is a Kanbokuto Brewery nearby โจ. The first aroma is faintly sweet. In the mouth, there is a refreshing acidity and juicy sweetness typical of white malted rice. It is followed by a slight astringency that finishes it off. The refreshing acidity is quite delicious.

I thought that Kyushu must be quite a good place for sake, and I am Kuroda Bushy from Fukuoka. I have been drinking a lot of different kinds of sake recently, and I think my palate has become dulled in terms of its characteristics... (I mean, I am chronically drinking too much). It is a daiginjo, so it has no peculiarities that bother me, and I drink it every night like I am obsessed with it. It ran out too soon... what a waste... It has a refreshing to mellow taste, a refined throat and no unpleasant aftertaste. Thank you very much.
