This is my first Kikumori. It's smooth and less acidic, which is good to pair with sashimi or other fish cuisine.

Shinshu Meizou, which has a brewery in the Ueda area, exhibits a freshly stored sake that has been aged in a thermal tank for two years at ice temperature. It is a 100% Miyamanishiki Junmai Daiginjo, with a Sake degree of -2 degrees, an acidity of 1.6, and an alcohol content of 16 degrees, making it a dark, mellow, sweet sake. At home. Although it is called Hokkaido series, I compared the taste with Wakakoma for the first time. The mouthfeel is smooth, but the aroma and the feeling in the mouth is something I've never had before. It has a unique taste with a little bit of brown sugar in the mouth. I think it stands out more when compared to the Kokushi Muso. I'm sure it will change after a while, but it was the first time for me to feel the depth of sake.

Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

At home. Kumamoto sake, Sung Kaoru, purchased on an expedition to Fukuoka. The Sansho I was looking for was sold out, and I managed to find this Kumamoto sake. It has a smooth, refreshing taste with a slight bitterness at the end. It was a dangerous one that was easy to drink. After a long time, I took a walk around Motomachi area in Kobe by bicycle, bought some gyoza (Chinese dumplings), and went home. Since it was Saturday afternoon, Sannomiya and Motomachi were quite crowded, and the city seemed to have regained its vitality.

I wanted a dry, dry drink. There are days when I'm in that mood. You might say don't choose raw, but I realized it after the sake bottle came. I enjoyed it with yudofu. It fits my mood today. When I think of dry, dry sake, I think of Niigata, Hiroshima, and Kochi. I admit to disagreeing.

This Sake paired well with the home made bacon we had with dinner. The flavor profile is bright with the flavor of banana and has a dry, clean finish. The dryness is mild and not overly strong.

I didn't like the dry taste that much, but it is delicious! It's crisp and refreshing, but also has a deep umami/sweetness. I like it!

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.
