Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. When buying Aizu sake, I was attracted by the words "Dry Honjozo". The simple name "Aizu" also intrigues me👍. When I opened the bottle and poured it, the aroma was mineral and clear. Although it is a regular honjozo, it has a delicate, gorgeous flavor, perhaps due to the 60% rice polishing ratio, which makes it one rank above other dry honjoze!
