Soba Kaiseki at Tachiaigawa Yoshidaya.
We opened a bottle of Shinmasa and wanted to drink some more, so we chose a sake from Kyoto with which we have little connection.
It is a sake called "Jyuseki.
It has a very elegant taste, which is a testament to the rice and water used in Kyoto.
It has a soft texture, with a slight sweetness and umami spreading in the mouth, and even though I was drunk on the Shinmasa, the taste remained on my tongue.
We paired it with soba noodles, which matched beautifully and complemented the new soba.
It was very delicious! (^^)/

I had never heard of the brand name "Jyuseki", but I found it in the recommendation section of the menu at the restaurant, so I tried it.
It had a soft and beautiful taste, and I thought I would finish it in no time if I left it alone.
